Our beef is raised in a traditional ranch setting located in Western Kansas. The cattle have been selected to produce high-quality, well marbled Angus beef, managed humanely in a sustainable system.

We have a very special cooking video this month with special guest Tess Woodruff! Tess and her family raise the Lamb we sell in our store, so we asked her to come show us her favorite way to prepare this month’s lamb special.

1 lamb shoulder roast, 1 lamb leg roast, and 2 lamb steaks for $125 in store.

Lamb Roast

• Preheat oven to 350°F
• Score a diamond pattern into the top of the lamb
• Mix together garlic, avocado oil, salt, pepper + whatever herbs and spices you like to make a sauce we added lemon and oregano to the first roast and orange, balsamic, green onion, and basil to the second
• Spread the sauce all over the lamb roast
• Place in the oven on a roaster pan and cook until it reaches your desired temperature we started with 1 hour 30 minutes for these 4 pound roasts then cooked till the perfect temperature for medium rare
Tips:
• Cover with foil for half of the cooking time, then remove the foil for the remaining half
• Let the roast rest before cutting

Internal temps:
Medium rare — 135°F
Medium — 150–155°F
Well done — 160–165°F
Shredded — 175–195°F

Lamb steaks

• season with favorite seasoning we used Kinder’s buttery steakhouse and Cowboy butter
• Grill for about 7 minutes each side
