We've just acquired a case of Bomberger's Declaration Small Batch Kentucky Straight Bourbon, from the Michter's Legacy Series.
At its root, Bomberger’s Declaration is about the use of some very well-seasoned Chinquapin oak. That type of oak has a different and more complex flavor profile compared to its cousin, white oak. Mint joints the cookies spices, earthy cocoa the vanilla, and sometimes a cherry note can be found on the top. And whereas typical bourbon barrel staves are dried for six months, the staves for these barrels were air dried for 3 years. The extended air drying time breaks down the tannins while still in the wood, moderating the “oaky” astringency that can arise in wh***ey maturation.
Long warming notes with good earth flavors linger on the tongue. This is a good wh***ey no question, something a little different from your standard Michter’s and pays homage to different distilling styles. Like it’s companion Shenk’s, this is a good addition for fans of Michter’s. It has a darker side to the sweet sugary bourbon notes. A slightly higher proof also really gives a lot of love to those who want to open this up with some water.
A truly special bottle
