🥬 Homemade Sauerkraut

If you’ve got cabbage coming in from your fall garden, sauerkraut is a wonderful way to preserve it! It is one of the easiest things to make with just two ingredients, cabbage and salt.

A few simple steps to get started:
🌿 Shred your fresh cabbage into thin strips.
🌿 Add salt (about 2% of the cabbage’s weight) and massage until the cabbage releases its natural juices.
🌿 Pack tightly into a clean fermentation jar, making sure the cabbage stays submerged beneath the brine. You can add a weight for this.
🌿 Cover with a fermentation lid or airlock and let it ferment at room temperature, tasting as it develops its signature tang.
🌿 Once it reaches your preferred flavor, transfer it to the refrigerator to slow fermentation.

🌱 Why You Shouldn’t Leave Bare Soil Exposed

As we head into fall and begin putting our gardens to bed, it’s easy to think that clearing everything out and leaving the soil bare is the best way to prepare for winter. But healthy soil needs a little protection, too!

Exposed soil is more vulnerable to erosion, nutrient loss, and temperature fluctuations.

Here are a few simple ways to protect your garden beds:

🍂 Add mulch: A layer of organic mulch helps regulate soil temperature, retain moisture, and suppress weeds. As it breaks down, it also contributes organic matter to the soil.

🌿 Plant cover crops: Crops like clover, winter rye, and oats help protect the soil from erosion, support soil structure, and add organic matter when incorporated back into the ground.

🌾 Leave some roots behind: Instead of pulling every plant out by the roots, consider cutting spent plants at ground level when appropriate. Their roots can continue supporting soil structure as they decompose.

🌱 Feed your soil: Adding compost helps replenish organic matter and supports the microorganisms that make healthy soil possible.

🧄 It’s almost time to plant your seed garlic!

If you’ve been thinking about adding garlic to your garden, now is the time to start planning. October through early November is a great window to get those cloves in the ground.

A few tips to get started:
🌱 Choose the biggest, healthiest cloves for planting.
🌱 Keep the papery skin on each clove and plant with the pointed end facing up.
🌱 Plant 2–3 inches deep and about 4–6 inches apart.
🌱 Give them a good drink of water and cover with 3–4 inches of straw mulch to help protect the soil and keep weeds down.

Sometimes it’s still 90° outside, but we’re already craving slower mornings, cozy meals, cool garden days, and a little more time to rest.

🎃 Fresh Pumpkin Hand Pies 🥧🍂

These homemade pumpkin hand pies are the perfect cozy fall treat and the maple glaze is to die for!

🎃 Pumpkin Filling
1 small pie pumpkin
½ cup brown sugar
1 tsp cinnamon
½ tsp nutmeg
¼ tsp ginger
¼ tsp salt
1 egg
2 tbsp heavy cream or milk

🥧 For the Crust
2 refrigerated pie crusts (or your favorite homemade pie crust)
1 egg + 1 tbsp water for egg wash

🍁 Maple Glaze
1 cup powdered sugar
2 tbsp pure maple syrup
1–2 tbsp milk (as needed)
¼ tsp cinnamon (optional)

Directions
1️⃣ Roast your pumpkin: Cut in half, scoop out the seeds, and roast cut-side down at 400°F for 35–45 minutes, or until tender. Scoop out the flesh and mash or blend until smooth.
2️⃣ Make the filling: Combine 1 cup pumpkin purée with brown sugar, spices, salt, egg, and cream. Mix until smooth.
3️⃣ Cut your crust: Roll out the pie dough and cut into small rectangles or circles.
4️⃣ Fill & seal: Add a spoonful of pumpkin filling to each piece of dough. Fold over, press the edges with a fork, and cut a tiny slit on top.
5️⃣ Bake: Brush with egg wash and bake at 375°F for 20–25 minutes, or until golden brown.
6️⃣ Drizzle with maple glaze: Whisk together powdered sugar, maple syrup, and milk until smooth. Drizzle over cooled hand pies and sprinkle with a little cinnamon if desired.
