Plastic versus glass bottles, does it really matter when it comes to olive oil? đŸ€·

It actually matters more than you might think.

Olive oil is often branded as a “health food,” and depending on how it’s grown, harvested, produced, and stored, a high-quality extra virgin olive oil can be incredibly beneficial due to higher polyphenols.

But even a great olive oil can be let down by poor packaging.

When olive oil is packaged in plastic, heat and prolonged storage can increase concerns around microplastics being released from the packaging into the olive oil. And beyond that, plastic also doesn’t protect the oil from its biggest enemies as well as dark glass does: oxygen, light, and heat.

Exposure to oxygen and light speeds up oxidation, gradually breaking down the oil and the polyphenols you’re buying it for in the first place.

That’s why, first things first, look for a dark glass bottle. đŸ«’

Does dark glass automatically mean the olive oil inside is high-grade and properly made? Absolutely not. A poor-quality olive oil can still be packaged in a dark glass bottle.

Dark glass simply means the packaging was done right, giving the olive oil a better chance of staying protected and preserving the quality it had to begin with.

So first, look for dark glass. Then, we can start looking at what’s actually inside the bottle. 👀

If you actually care about what you’re putting in your body, the bottle matters too. Plastic is more permeable to oxygen, and compounds from plastic packaging can migrate into the oil over time, especially if it’s ever exposed to heat. Dark glass creates a stronger barrier against oxygen and light, helping protect the olive oil’s freshness, flavor and antioxidants.

Many assume greener olive oil automatically means better olive oil. There is a reason people make that connection: early harvest olive oils can often contain higher chlorophyll levels, which can give the oil a greener appearance.

But color alone is still not a reliable way to judge quality.

Some early harvest EVOOs are deep green, while others are beautifully golden. Olive variety, natural pigment balance, and how the oil settles after pressing can all affect the final color.

Freshly pressed oils can also appear greener at first, while over time some oils naturally shift toward a more golden tone as chlorophyll changes. This can happen even in high quality extra virgin olive oils.

That is why professional olive oil tastings are often done in blue tasting glasses. The goal is to remove visual bias and focus on what truly matters: aroma, freshness, balance, bitterness, pepperiness, fruitiness, and overall harmony.

At the end of the day, quality comes from the process behind the bottle.

How the olives are grown.
When they are harvested.
How they are harvested.
How quickly they are pressed after harvest, and how they were pressed.
How oxidation is minimized during production and storage.
How the oil is protected after bottling.

A good EVOO should taste fresh, clean, balanced, and alive.

One of the most common olive oil myths we hear is that you shouldn’t cook with Extra Virgin Olive Oil.

The truth is more nuanced.

As Extra Virgin Olive Oil heats up, some of its beneficial antioxidants, known as polyphenols, gradually decrease. The same way certain nutrients in vegetables can change during cooking, heat does have an impact on olive oil.

However, those same polyphenols also help protect the oil from oxidation. This is one reason why high-quality, high-polyphenol Extra Virgin Olive Oils are often more heat-resistant than many people realize.

Not all olive oils are created equal. Freshness, olive variety, harvest timing, production methods, storage, and antioxidant content all play a role in how an olive oil performs during cooking.

For generations, Extra Virgin Olive Oil has been used throughout the Mediterranean for sautéing, roasting, baking, and everyday cooking.
