🍯 HONEY 101 FRIDAY — WEEK 2 🐝

Why Does Honey Crystallize?

Have you ever opened your pantry and noticed your honey has become thick, cloudy, or even completely solid?
Don't throw it away! Crystallization is a completely natural process—and it does NOT mean your honey has gone bad. 🍯

Honey is made up primarily of natural sugars, including glucose and fructose. Over time, some of the glucose can separate from the liquid and form tiny crystals. As those crystals grow, the honey becomes thicker and eventually may turn solid.

A few things to know:

🍯 Crystallized honey is still perfectly good honey. The texture has changed, but that doesn't mean it has spoiled.

🐝 It doesn't mean sugar was added. Crystallization happens naturally because of the sugars already present in honey.

🌼 Some honeys crystallize faster than others. The nectar source—and therefore the natural balance of glucose and fructose—can make a big difference.

🌡️ Temperature matters. Cooler storage temperatures can encourage crystallization, which is one reason we recommend keeping honey at room temperature rather than in the refrigerator.

✨ Raw honey can crystallize. Naturally occurring particles such as pollen can provide places for crystals to begin forming.

And here's the important part:
Crystallization is a change in texture—not a sign of bad honey.
Prefer your honey liquid? Next week on Honey 101 Friday, we'll show you how to gently liquefy crystallized honey without overheating it. 🍯
Real honey does real honey things. 🐝
