Today is Labor Day, so our magic is simple: make something that asks very little of you.
Put a simmer pot on the stove, let the house smell wonderful and give yourself permission to rest.

Labor Day became a federal holiday in 1894, following years of organizing by American workers. At its heart, the day recognizes the labor and contributions of working people.
And not all work happens at a workplace. Cooking, cleaning, caregiving and tending a home are forms of labor too, even when nobody clocks the hours.
For centuries, people have also brought fragrant plants, herbs and spices into their homes. Todayโs simmer pots are a simple modern way to fill a space with scent, and scent has a particularly strong connection with memory.

Apple Orange Cinnamon Simmer Pot
Add sliced apple, orange slices and a few cinnamon sticks to a small pot of water. Bring it just to a boil, then reduce to a very low simmer.
Add more water as needed and never leave a simmering pot unattended.
This one is for fragrance, not drinking.
