Short Loin [ˈshȯrt-ˌlȯin]

The short loin is one of the most prized parts of the beef carcass. It includes two classic steakhouse cuts: the Porterhouse and the T-Bone.

Both cuts feature a tenderloin filet and a New York strip separated by a T-shaped bone. The difference? Porterhouses are cut from the rear of the short loin and contain a larger portion of tenderloin, while T-Bones are cut closer to the front and feature a smaller filet.
