Chef Pawel Siemion discovered his love for cooking at a young age. While attending The Illinois Institute of Arts - Chicago, he began working for Chef Cary Taylor where he quickly moved up from dishwasher to sous Chef. Since then, he has worked at many Chicago staple restaurants, including The Southern and La Sirena Clandestina.
