Chocolate Pecan Pie
Ingredients
1 (9 inch) pie shell
1 oz unsweetened baking chocolate
7 tbsp unsalted butter, divided
œ c light corn syrup
œ c dark corn syrup
Ÿ c white sugar
3 eggs, beaten
1 c Whitleyâs Salted Pecan Halves, chopped
1 tsp vanilla
Instructions
Preheat oven to 350â°F
Prepare a double boiler: Fill the bottom saucepan with a few inches of water and bring to a boil. Set the upper saucepan on top and add 3 tbsps of butter and the chocolate. Stir constantly until melted and smooth. Remove from heat
In a separate saucepan, combine remaining 4 tbsps of butter, corn syrups, and sugar. Stir together over low heat until butter is melted and all ingredients are blended. Add to the melted chocolate, then stir in beaten eggs and vanilla
Spread chopped pecans evenly in pie shell. Pour filling over top and spread evenly across pecans
Lightly cover the edges of the pie crust with foil and bake for 45-50 minutes. When finished, the pie should be slightly jiggly, and the top should spring back lightly when tapped in the center
Fully cool on a wire rack before cutting. Serve with whipped cream, and enjoy!
Helpful Tips
If you donât have a double boiler, you can use a saucepan and a metal mixing bowl. Make sure the mixing bowl does NOT have a rubber bottom. Fill the saucepan with a few inches of water and bring to a boil. Place the bowl on top, and melt together butter and chocolate as instructed
