Do You Really Know What Is in Your Food?

Traditional sourdough can be made with four basic ingredients:
Flour, water, salt, and sourdough starter.
A commercial supermarket loaf may contain considerably more. Depending on the brand, the ingredient list can include sweeteners, soybean oil, dough conditioners, preservatives, emulsifiers, artificial flavors, and other additives designed to make bread softer, cheaper, and capable of sitting on a shelf longer.
The question is not simply whether every individual ingredient is legally permitted.
The larger question is why something as basic as bread needs an extensive list of industrial ingredients in the first place.
The Same Vegetables Deliver Less Nutrition
Modern agriculture has also changed the soil.
Intensive monocropping, synthetic fertilizers, erosion, and repeated chemical applications can affect soil health and the conditions plants need to obtain minerals.
That means telling people to “eat more vegetables” may not be the entire answer. We also need to ask where those vegetables were grown, how the soil was treated, when they were harvested, and how far they traveled before reaching the plate.
