🍤🔥 CAJUN SHRIMP BREAKFAST HASH 🔥🍳
Crispy potatoes, juicy Cajun shrimp, sautéed peppers & onions, and perfectly fried eggs come together for a Southern-style breakfast that does NOT play around. 😮💨

🛒 INGREDIENTS
• 1 lb large shrimp, peeled & deveined
• 1½ lbs Yukon Gold potatoes, diced
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• ½ yellow onion, diced
• 2 cloves garlic, minced
• 4 large eggs
• 2 tbsp olive oil
• 1½ tbsp Cajun seasoning, divided
• ½ tsp smoked paprika
• Salt & black pepper to taste
• 2 green onions, sliced
• Hot sauce, optional 🌶️
🍳 DIRECTIONS
1. Toss diced potatoes with 1 tbsp olive oil, ½ tbsp Cajun seasoning, smoked paprika, salt and pepper.
2. Heat a large skillet over medium-high heat. Cook potatoes for 12–15 minutes, stirring occasionally, until browned and tender.
3. Add bell peppers and onion. Cook for 4–5 minutes, then add garlic and cook for another 30 seconds.
4. Toss shrimp with remaining Cajun seasoning.
5. Push the potato mixture to the sides of the skillet. Add remaining olive oil and shrimp. Cook shrimp for about 2–3 minutes per side, until pink and cooked through.
6. In a separate skillet, fry the eggs to your preferred doneness. 🍳
7. Divide the Cajun shrimp hash among plates and top each serving with a fried egg.
8. Finish with sliced green onions and a drizzle of hot sauce if you like a little extra 🔥.
