Congratulations to Thorncrest Farm in Goshen, Connecticut, on being named Connecticut's 2026 New England Green Pastures Award winner.

From pasture to chocolate, every step at Thorncrest Farm is guided by a commitment to quality. The Thorn family has built something truly unique by connecting exceptional dairy management with value-added innovation. The same care that goes into raising their dairy herd is carried through to their on-farm chocolate production, where milk from individual cows is transformed into their signature Single Cow Origin Milk House Chocolates.

At Thorncrest, every cow contributes her own distinct characteristics to the final product, creating a farm-to-table experience unlike any other. This innovative approach has helped the family create a thriving agricultural business while giving visitors a deeper appreciation for the connection between dairy farming, food production, and craftsmanship.

Congratulations to the Thorn family on this well-deserved recognition and their continued leadership in Connecticut agriculture. Learn more about Thorncrest at s.uconn.edu/thorncrest

Episode 3 of June Dairy Month

What connects our dairy farm and our chocolates?

Milk.

The same commitment to quality and care that goes into raising our herd inspires every handcrafted chocolate created in the chocolate shop.

Farm roots. Sweet traditions. 🍫🐄

Adding cacao nibs into a batch of chocolate in the concher.

About our conch process, we use a long slow stone ground conch to reach our signature smooth silky texture and flavor. The word conch comes from the conch shell used by the Aztecs to grind their cacao beans to a drinkable chocolate.

Would you like to know where your milk comes from?

We can actually show you which cow, tell you her name, her family history and what makes her milk so smooth and pure.

Contented cows give sweet milk. Caring for cows is an honor and something we take to heart. Producing milk is not just about placing milk into a bottle, it’s about cow comfort, cow care and cow health - environmentally and personally.
