One of the most important steps to delicious cacao is fermentation.

Over 5 to 8 days, naturally occurring yeasts and bacteria transform the sugars surrounding the beans, creating the foundation for the rich, complex flavors that develop throughout the rest of the process.

Throughout fermentation, the beans are carefully monitored, rotated to introduce oxygen, and checked to ensure everything is progressing as it should. Rushing this step can leave cacao tasting flat and astringent, which is why our partners take the time to do it right.

Every origin, harvest, and fermentation is a little different. That’s part of what makes every batch of ceremonial cacao unique, while thoughtful craftsmanship ensures a consistently exceptional experience.

Today is International Day of the World’s Indigenous Peoples - a day that recognizes the rights, cultures, knowledge systems, and contributions of Indigenous Peoples around the world.

For those of us who drink ceremonial cacao, today offers an opportunity to deepen our understanding of cacao’s history and honor the Indigenous peoples whose relationships with ceremonial cacao extend back thousands of years.

We are deeply grateful to the Indigenous peoples who recognized the sacredness of cacao and had the courage to maintain this wisdom, even in the face of violent colonizing forces. Some of these peoples whose names we know include the Mayan, Aztec, Olmec, Toltec, and Marañon peoples.

One way to honor this connection is by learning about the land and culture of the people from where your cacao originates. As you drink, consider what you’ve learned, offer your gratitude, and before your first sip, offer your cacao back to the Earth in reciprocity.

There’s a lot more to ceremonial cacao than what ends up in your cup. 🤎

It begins with whole cacao beans, regeneratively farmed and ethically sourced from small family farms. Nothing is added or removed, and the cacao is minimally processed to retain its bioactive compounds, including flavonoids, neuro-modulators, theobromine, minerals, and healthy cacao butter.

But ceremonial-grade cacao also includes the intentionality that goes into it. The gold standard we created to define what makes cacao ceremonial-grade is: regeneratively farmed, ethically sourced, 100% pure cacao, sipped intentionally with gratitude.

Together, these are part of what makes ceremonial cacao fundamentally different from cocoa powder, conventional chocolate, or simply another morning beverage.

What if deeper focus didn’t require caffeine and force?

Cacao supports a different kind of focus, one rooted in circulation, neurochemistry, and the way we intentionally shift our attention.

Theobromine supports healthy blood flow and oxygen delivery throughout the body, including the brain, while cacao flavanols support vascular function and cerebral blood flow associated with cognitive flexibility and sustained attention.

The result? Focus that feels less scattered, less driven by urgency, and more immersive.
And there’s another piece: ritual.

Warming the water, stirring with intention, and pausing before your first sip creates a transition from distraction into presence. With repetition, that preparation can become a cue that it’s time to direct your attention somewhere fully.

Your cacao might be missing something.

Here are five preparation mistakes we see most often, and how to avoid them.

1. Using boiling water
Aim for water around 180°F to preserve cacao’s rich flavor and beneficial compounds.

2. Choosing the right liquid
Water creates a traditional preparation, while plant-based milks like oat, almond, or cashew create a creamier cup.

3. Oversweetening
Try your cacao unsweetened at least once. You may discover flavors you never noticed before.

4. Making it too watery
Start with 20-25 discs and about 6 oz of liquid, then blend until creamy.

5. Forgetting your intention
One deep breath or a moment of gratitude before your first sip can completely change your experience.

There isn’t one perfect way to prepare cacao. The joy is discovering the cup that feels most nourishing to you. 🤎

Looking for a refreshing way to enjoy your ceremonial cacao this summer?

Horchata is a beloved traditional Mexican drink, most commonly made with rice, cinnamon, milk, and sugar.

It’s creamy, refreshing, and a staple throughout Mexico, especially during the warmer months.
Inspired by those classic flavors, we created an iced version using our Oaxacan Spice Botanical Cacao.

Rice milk provides the creamy base while our Oaxacan Spice Ceremonial Cacao layers in cinnamon, cardamom, ginger, cayenne, and organic chaga for a cup that’s rich in flavor and easy to make at home.

You’ll need:
20-25 Oaxacan Spice cacao discs
½ cup hot water
½ cup unsweetened rice milk
1 tsp vanilla extract
Maple syrup, coconut sugar, or honey, to taste
A pinch of sea salt
Ice

Melt the cacao into the hot water and blend until smooth. Add the remaining ingredients, blend until creamy, then pour over ice.

Finish with a sprinkle of cinnamon or freshly grated nutmeg, and enjoy.

Save this recipe for the next time you’re craving a refreshing cup of ceremonial cacao.

One of our favorite ceremonial cacao blends just got even better. 🤎

After Jonas, Ora’s founder, found himself adding chaga mushroom to every cup of Oaxacan Spice, we knew we had to share it with all of you.

So now, our original Oaxacan Spice blend includes organic chaga mushroom.

Why chaga?

Chaga is loaded with health benefits. It helps reduce oxidative stress, supports healthy blood sugar levels, and helps protect the liver. But like many supplements, it can be difficult to remember to take every day. So instead, we blended it into one of our favorite ceremonial cacao recipes.

Beyond its wellness benefits, chaga brings a grounded depth that beautifully complements the invigorating spices already found in Oaxacan Spice: cinnamon, ginger, cardamom, and cayenne.
