Uncle Buck's Superior Sausage Shop (formerly known as Buck's Butcher Shop) will be open to make specialty meats starting the first part of February. My Motto...."You can't beat My Meat....I do it by Hand". So if you have any wild game you would like made into Brats, Summer Sausage, Breakfast Sausage, Hot or Sweet Italian Sausage, Venison Bacon, Jerky or Pepper Sticks. Give me a call. Doesn't look like I will be ready to start up my butcher shop by the start of the late season elk hunts. My plan now is to open up my specialty meat production sometime after the first of the year but probably not do any full processing. So keep Buck's Butcher Shop in mind if you are looking to have any of your already processed meat turned into sausage, jerky or peppersticks. Hip replacement surgery is one week in the past. Surgery went well and I am getting around pretty well but not well enough to start up my butcher shop just yet. Hopefully by Dec 15th when late season shoulder hunt starts I can reopen to process elk. With that said, I will need some help if anyone is interested in learning how to process wild game. My hip has gotten so bad I will not be taking any wild game for processing this year until I get my hip replacement done. Which means I probably won't be doing any processing at all this season unless rehab goes well enough that I can do some late season elk during the shoulder hunt.
