CARAMEL APPLE MARTINI
Cozy and perfect for the fall!!!

Ingredients
* 1½ oz vodka
* 1 oz sour apple liqueur
* 1 oz apple c***r
* ½ oz caramel syrup
* ½ oz fresh lemon juice
* Ice
* Optional garnish: caramel sauce, thin apple slice, or cinnamon-sugar rim

Add the vodka, sour apple liqueur, apple c***r, caramel syrup, and lemon juice to a cocktail shaker filled with ice. Shake vigorously for about 15 seconds, then strain into a chilled martini glass.

For a more festive version, drizzle caramel sauce inside the glass before pouring. A cinnamon-sugar rim also works especially well.

Tip: If you want it less sweet, cut the caramel syrup to ¼ oz. For a richer, creamier version, add ½ oz of Irish cream or half-and-half.

CHEESY TACO TORTELLINI PASTA
A creamy, cheesy mash-up of taco night and pasta night. Makes about 4 servings.

Ingredients
* 20 oz refrigerated cheese tortellini
* 1 lb ground beef or ground turkey
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 packet taco seasoning
* 1 can (10 oz) diced tomatoes with green chiles, undrained
* 1/2 cup salsa
* 1/2 cup beef or chicken broth
* 4 oz cream cheese, softened
* 1 cup shredded cheddar or Mexican-blend cheese
* 1/2 cup corn, optional
* 1/2 cup black beans, drained and rinsed, optional
* Salt and pepper to taste

For topping
Sour cream, diced avocado, chopped cilantro, sliced green onions, crushed tortilla chips, jalapeños, or extra shredded cheese all work well.

Directions
1. Cook the tortellini according to the package directions. Drain and set aside.
2. Brown the meat. In a large skillet over medium-high heat, cook the ground beef and onion until the meat is browned and the onion is tender. Drain excess grease. Add the garlic and cook for about 30 seconds.
3. Add the taco flavor. Stir in the taco seasoning, diced tomatoes with green chiles, salsa, broth, and the optional corn and black beans. Simmer for 3–5 minutes.
4. Make it cheesy. Reduce the heat to low. Stir in the cream cheese until smooth, then add the shredded cheese and stir until melted.
5. Add the tortellini. Gently fold the cooked tortellini into the taco-cheese sauce. If it seems too thick, add a splash of broth or reserved pasta water.
6. Build your bowls. Spoon into bowls and pile on your favorite taco toppings.

Easy variation: For an extra-creamy version, stir in 1/2 cup heavy cream before adding the shredded cheese. For more heat, add hot salsa, cayenne, or chopped chipotle peppers.

PUMPKIN CHOCOLATE PEANUT BUTTER SWIRL BROWNIES
A fudgy fall dessert with pumpkin-spiced chocolate brownies and ribbons of creamy peanut butter.

Ingredients
* ½ cup unsalted butter, melted
* ¾ cup brown sugar
* ½ cup pumpkin purée
* 2 large eggs
* 1 tsp vanilla extract
* ¾ cup all-purpose flour
* ½ cup unsweetened cocoa powder
* 1 tsp pumpkin pie spice
* ½ tsp salt
* ½ cup chocolate chips
* ⅓ cup creamy peanut butter
* 1–2 tbsp powdered sugar, optional, for a sweeter peanut butter swirl

Method
1. Heat oven to 350°F / 175°C. Line an 8-inch square pan with parchment paper.
2. Whisk melted butter and brown sugar until smooth. Mix in pumpkin, eggs, and vanilla.
3. Stir in flour, cocoa powder, pumpkin pie spice, and salt just until combined. Fold in the chocolate chips.
4. Spread the batter evenly in the pan.
5. Warm the peanut butter for about 15–20 seconds so it drizzles easily. Stir in powdered sugar if desired.
6. Drop spoonfuls of peanut butter over the brownie batter, then gently swirl it through the top with a knife.
7. Bake for 25–30 minutes, until the edges are set but the center still looks slightly soft.
8. Cool completely before slicing for the fudgiest texture.

Finishing idea: Sprinkle the top with flaky sea salt and extra chocolate chips before serving. A scoop of vanilla ice cream works especially well with these.

* 2 dashes aromatic bitters
* 2–3 brandied cherries
* Optional: ¼ oz dark rum floated on top for a richer finish

2. Shake well for about 10–15 seconds.
3. Double-strain into a chilled coupe or Nick & Nora glass.

CREAMY PUMPKIN SAGE PASTA
A warm, comforting dinner that feels autumnal without being too heavy. Serves 4 and takes about 30 minutes.

Ingredients
* 12 oz pasta, such as rigatoni or fettuccine
* 1 tbsp olive oil
* 2 tbsp butter
* 3 cloves garlic, minced
* 1 cup pumpkin purée
* 1 cup heavy cream or half-and-half
* ½ cup grated Parmesan, plus more for serving
* 1 tsp chopped fresh sage, or ½ tsp dried sage
* ¼ tsp ground nutmeg
* ½ tsp salt, plus more for pasta water
* Black pepper, to taste
* ¼–½ cup reserved pasta water
* Optional: toasted walnuts or pecans and crispy sage leaves

Directions
1. Cook the pasta in well-salted water until al dente. Reserve about ½ cup of pasta water before draining.
2. Build the sauce. Heat olive oil and butter in a large skillet over medium-low heat. Add garlic and sage and cook for about 30–60 seconds, until fragrant.
3. Stir in the pumpkin, cream, nutmeg, salt, and several grinds of black pepper. Simmer gently for 3–4 minutes.
4. Add Parmesan and stir until smooth. Thin with a splash of reserved pasta water until the sauce is silky.
5. Add the drained pasta and toss until thoroughly coated. Taste and adjust the seasoning.
6. Serve with extra Parmesan and, if you like, toasted nuts or crispy sage on top.

Make it a full fall dinner: pair it with a simple arugula-and-apple salad and warm crusty bread. For extra protein, add roasted chicken, Italian sausage, or white beans.

SKELETON’S KISS COCKTAIL
A dark, dramatic Halloween cocktail with a blood-red finish and a creepy skeleton garnish.

Ingredients
* 1½ oz vodka
* ¾ oz black raspberry liqueur
* 1 oz cranberry juice
* ½ oz fresh lime juice
* ½ oz simple syrup
* 1–2 dashes aromatic bitters
* Ice
* Optional: black sanding sugar for the rim

Skeleton garnish: Use a skeleton cocktail pick, a small plastic skeleton clipped to the glass stem, or thread two lychees onto a pick and add tiny chocolate dots to create spooky “skull eyes.” Keep any non-food decorations outside the drink.

Directions
1. Rim a coupe or martini glass with lime juice and black sanding sugar.
2. Add the vodka, black raspberry liqueur, cranberry juice, lime juice, simple syrup, and bitters to a shaker filled with ice.
3. Shake vigorously for about 15 seconds.
4. Strain into the prepared glass.
5. Add the skeleton garnish and serve.

Halloween effect: Drizzle about ¼ oz grenadine slowly down the inside of the glass after pouring. It creates a blood-like red streak beneath the darker cocktail.

BUFFALO CHICKEN WAFFLE NACHOS
Crispy, cheesy, spicy, and a little unexpected for game day.

Use mini waffles or quartered frozen waffles as the “chips,” then top them with shredded buffalo chicken, cheddar and mozzarella. Bake until the cheese is bubbly, then finish with ranch or blue-cheese drizzle, sliced green onions, pickled jalapeños, and a tiny drizzle of maple syrup.

The maple + buffalo combination gives you sweet, spicy, salty, and crunchy all at once, and the waffle pieces are sturdy enough to grab by hand.

For about 8 people, you’ll need roughly 20 mini waffles, 2 cups cooked shredded chicken, ½ cup buffalo sauce, 2 cups shredded cheese, and your preferred toppings. Bake at 400°F for 8–10 minutes after assembling.

Game-day upgrade: Serve them on a big platter with extra buffalo sauce and ranch in the center for dipping.
