Cajun food is one of the most
misunderstood cuisines out there usually it’s mistaken for spicy. The reality is, most Cajun and Creole dishes are highly seasoned, rather than just hot and spicy. The dishes call for ingredients with a ton of flavor, like fresh vegetables. fresh herbs, and smoked meats. It lures you in with a depth of flavor and well-balanced spices that are unmistakable.
Heavy-handed cayenne is how chefs outside of Louisiana interpret Cajun. In Louisiana we just put the hot sauce on our table and add it for our spice . A properly prepared Cajun or Creole dish should leave you with a taste for more not running to gulp down a glass of milk to put out the fire spreading down your esophagus.
Cajun are not descendants of Acadians they are blended with Germans, British, Italian, African, Greek, and Spanish, moved into the area then blended all their cooking together. Cajun food is one of the most distinct cuisines with a culture just as complex as its dishes.
