🍣 Time to Learn Nigiri!

Our Beginner Sushi Class at DASSAI BLUE has been incredibly popular and sold out — now it’s time to take your sushi skills to the next level with an experienced Japanese sushi chef!

Sushi Class Level 2 has just a few spots remaining.

In this hands-on class, you’ll go beyond the basics and dive deeper into the techniques and traditions of Japanese sushi making.

🍣 What you will learn
• A quick review of sushi rolls from the Beginner Class
• How to make nigiri, including preparing sushi rice
• How to prepare sashimi and properly slice fish

our Corners × Dassai Blue in Hyde Park, New York. 🍶

The kombu-cured tautog, black bass and scallop roulade, and Ever-Growing Family Farm rice were the highlights—and I’m still thinking about that sake-kasu broth.

We finished with Dassai sake gelato and yuzu sake, bringing citrus and sake flavors together in a dessert some guests compared to limoncello.

I’ll definitely return to Dassai Blue for future pop-ups, and I’m looking forward to trying Four Corners when it officially opens in Chatham.

🍙 ONIGIRI POP-UP THIS SATURDAY! 🍶🍙

Join us at Dassai Blue this Saturday, August 15 from 12–4 PM for a special Onigiri Pop-Up with local chef Hibino of Hibino Day by Day!

Onigiri are traditional Japanese rice balls made with seasoned rice and often filled or wrapped with delicious ingredients. They're the perfect bite to enjoy with a cold glass of Dassai Blue.

Back by popular demand, our Beginner Sushi Workshop returns on Wednesday, August 12 and Wednesday, August 26!
Whether you've always wanted to learn how to roll sushi or you're looking for a unique outing with family or friends, this hands-on class is the perfect introduction.
