You don’t need to understand every detail of coffee roasting before you roast your first batch.

Start with the basics: green coffee beans, a home coffee roaster, a roast profile, a way to record what you did and keep track of it

Then, pay attention to what the beans are telling you. Colour, aroma and especially the sounds of the roast can help you understand what’s happening.

Once you’re comfortable, that’s when the fun really begins. Experiment with different roast profiles, power adjustments, drum speed and roast development to see how they change the cup.

And remember: your first roast doesn’t need to be perfect!

When you test new things, though, try to stick to 1 change per batch so you know exactly what is causing each difference.

Home roasting is a skill you build over time, and every batch teaches you something new.

When espresso lacks sweetness, body or a satisfying finish, it’s easy to immediately reach for a finer grind or change your dose.

But it's not necessarily all because of extraction, a hollow cup can be caused by under-extraction, insufficient roast development, or simply brewing coffee before it has had enough time to rest.

That’s why it’s important to look at the roast as well as the brewing process. Extraction can only reveal what’s already there, it can’t add the structure, sweetness or body that the roast never developed.

So before chasing another adjustment on your grinder, ask yourself:

Did the roast develop enough to support the espresso?

Freshly roasted doesn’t always mean ready to brew. ☕

After roasting, coffee releases a significant amount of CO₂ through a process called degassing. Brew it too soon and that excess gas can make extraction more difficult and the cup taste less balanced

But there’s no universal “perfect” resting period. The coffee’s origin, processing method, roast level and even your brewing method can all influence when it reaches its sweet spot

That’s why patience can be just as important as the roast itself. Sometimes a coffee needs a few days. Others continue to develop for much longer!

Sometimes sour espresso is a brewing problem, other times it starts much earlier with the roast.

An underdeveloped roast can bring sharp acidity, grassy notes and a hollow sweetness, even when your espresso technique is solid.

It’s tempting to react to every small change you see during a roast, especially when you have the ability to make adjustments as you go.

But more intervention doesn’t necessarily mean more control. Constant changes can make it harder to understand what’s actually influencing the roast.

Often, a better approach is to establish a clear direction early, watch how the coffee responds, and make small, intentional corrections when they’re genuinely needed.

The goal isn’t to control every second of the roast. It’s to create the conditions for consistent development, and sometimes that means simply letting the roast continue.

Not every coffee wants to be roasted the same way.

Experienced roasters know that a washed Ethiopian, a natural Brazil, and a high-density Colombian won’t all respond to the same approach. Factors like origin, density, and processing method all influence how a coffee behaves during roasting.

Rather than following the exact same profile every time, the goal is to understand what each coffee needs and adjust accordingly.

That’s what consistency really means - not repeating the same roast, but making the right decisions for each coffee to bring out its best flavours.

Instead of chasing the lightest possible roast, we encourage asking one simple question:

“What roast lets this coffee taste its best?”

Some coffees shine just after first crack, while others benefit from a little more development to bring out sweetness, body, and balance. Every bean is different, and that’s part of what makes roasting so rewarding.
