Hi! 👋 I’m Sandy Lo — author, baker, longtime food and recipe blogger, and the person behind The Merry Bake Shop. 🎄🍪

Since I haven’t properly introduced myself in a while, I thought I’d tell you a little about the kind of baker I am… and the kind I’m definitely not. 😂

You probably won’t find towering layers of frosting, intricately decorated cookies, or elaborate chocolate-dipped creations coming out of my kitchen. And absolutely no shade to the bakers who make them — I’m AMAZED by that kind of talent and patience. Those hands are clearly built differently than mine. 😂

My baking style is a little simpler.

I love completely homemade treats that feel cozy and nostalgic — cookies with crispy edges and soft centers, mini muffins, brownies, donuts, candied nuts, and familiar flavors with a fun twist here and there.

And everything I make is vegan. 🌱

I’ve been blogging about food and sharing recipes for years, with vegan recipes becoming a big part of that journey. When I created The Merry Bake Shop, I wanted to make completely plant-based treats that never feel like you’re settling for the “vegan version.”

Because you don’t have to be vegan to love vegan baked goods. You just have to love good baked goods. ❤️

Sweet and indulgent? Absolutely.
Heavy and over-the-top? Usually not.

I want you to taste the brown butter, apple cider, espresso, cinnamon, peanut butter and jam — not have those flavors disappear underneath a mountain of frosting.

Maybe that’s the writer in me. I like personality and creativity, but I don’t want to bury the story.

And truthfully? Intricate decorating requires patience and hand coordination I simply do not possess. 😂 Carpal tunnel be damned — I’d rather save these hands for writing books and scooping cookie dough.

So that’s me — and The Merry Bake Shop.

Completely homemade. Completely vegan. Cozy, nostalgic, a little whimsical, and always made with the idea that flavor should be the star. 🍪✨

Let the fall markets begin! 🍂 Have you been wanting to try my baked goods? Stopping by a market I’m popping up at is the best way to do it! I won’t always have my whole menu though — so if you’re craving something specific, you can always pre-order for pickup at one of these markets!

When people ask what my favorite thing I make is, I usually say the PB&J Cookie. 🥜❤️🍪

Of course, I love all of my bakes—otherwise, I wouldn’t serve them! 😂 But there’s just something so nostalgic and comforting about this one.

It’s satisfying and filling without feeling dense or heavy, with that classic peanut butter flavor and sweet raspberry jelly bringing back all those familiar PB&J vibes. 💕 Bonus: they’re vegan!

It’s one of those bakes that makes me happy every time I make it—and even happier when someone else loves it as much as I do!

I'm partnering up with Faherty Town Center to put together a vegan pop-up on August 29th! We're looking for one or two vendors - no fee. I'm trying to make this diverse so it's beneficial for all of us.

I offer cookies, muffins, and candied nuts so we're looking for vendors that offer other items or non-food items like handmade soap, jewelry, etc!
