Brisket went on around 10:00 last night and is looking good. This is my first cook on the slide out racks from The BBQHQ. Absolutely loving the extra space the racks provide for the Green Mountain!

Temp is just over 170° on the point. Time to put it in the foil boat and pop the heat up to 275° for the rest of the cook.

Thanks to everyone who came out to support us in our inaugural event. All in all it went well with only one small hiccup… An ant invasion. Thankfully all of the food items were well wrapped and no ants got in.

I especially enjoyed seeing Matt and his lovely wife Shannon. And Jay, thank you for your thoughtful critique. I truly do appreciate it.
