last night i decided to experiment on a loaf and then make 2 loaves that someone ordered. and they were complete fails! i’ve already reached out and they are graceful enough to give me a second chance. all three loaves came out so flat and sad and i am not sure why (tips are helpful!). on the one i experimented with i was trying out a different hydration (and may continue to experiment with that). all of this to say, i am still new at this, i am still learning, and i can’t wait to perfect it. in the mean time…at least i have bread to eat!!
