This page is NOT owned by a government agency and has not been contracted by any government agency. Lyman of Lambton County, Ontario, Canada is considered the father of Lantana. He received an initial 160 acres of land from the Armed Occupation Act in 1887 and settled in the area in 1889 now called Lantana which he named after the Lantana flower that once grew wild. Lyman was an enterprising business man who served as the first Postmaster for Lantana, operated a Lantana hotel from his home, owned an oyster business and a chain of namesake general stores. Other settlers in Lantana were black Bahamians who arrived to Lantana for employment in southern Florida in pineapple fields and on Henry Flagler's Florida East Coast Railway. Lantana is a small town with about 2.5 square miles in size with more than 11,000 residents. This page is not affiliated with a government agency.

A taste of the coast, grilled and golden. Here is the recipe to our Grilled Florida Spiny Lobster Rolls!

Ingredients:
1 pound Florida spiny lobster meat, grilled and chopped

Florida Romaine or Butter lettuce, shredded (or your favorite lettuce)

½ cup Florida celery, chopped

Rolls, split in half

2 green onions, chopped

½ cup mayonnaise

1 tablespoon prepared Dijon mustard

1 teaspoon lemon juice

1 teaspoon Worcestershire sauce

Sea salt and fresh ground pepper, to taste

Preparation:
Heat grill to medium-high. Cut the lobster tail in half, leaving the lobster meat in the shell. Season with salt and pepper and grill for 2 to 3 minutes per side or until meat is no longer translucent. Remove from shell to cool and cut into bite-sized pieces. Combine the mayonnaise, mustard, lemon juice, Worcestershire, celery, salt and pepper and mix thoroughly. Gently fold in lobster meat. Fill rolls with lobster mixture and garnish with green onions. Serve chilled.
