Cassia cinnamon contains up to 1% of a toxin called coumarin, which is scientifically proven to cause liver damage, impaired cognitive development, and cancer cell formation. True Ceylon cinnamon (cinnamomum verum) only contains trace amounts of coumarin (approximately 0.004% - that’s 250 times less!), and has an exceptionally superior flavor.
