🌽 Creamy Mexican Street Corn Chicken Salad

Ingredients
Goodlife Brands 1½ lb boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp chili powder
1 tsp smoked paprika
½ tsp cumin
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Juice of ½ lime
Creamy corn dressing
¾ cup mayonnaise
½ cup sour cream or Greek yogurt
2 tbsp fresh lime juice
1 tsp chili powder
½ tsp smoked paprika
½ tsp cumin
1 small garlic clove, finely grated
½ tsp salt
¼ tsp black pepper
¼ cup chopped fresh cilantro
Salad
2½ cups corn kernels — fresh, frozen, or canned/drained
¼ cup finely diced red onion
½ cup crumbled cotija or feta cheese
¼ cup chopped cilantro
1–2 jalapeños, finely diced (optional)
1 avocado, diced (optional)
Extra lime wedges
Tortilla chips, for serving

Instructions
Season the chicken.
Mix the olive oil, chili powder, paprika, cumin, garlic powder, salt, pepper, and lime juice. Rub all over the chicken.
Cook the chicken.
Grill or pan-sear over medium-high heat for about 5–7 minutes per side, depending on thickness, until the center reaches 165°F (74°C). Rest for 5–10 minutes, then chop into bite-size pieces.
Char the corn.
Heat a large skillet over medium-high/high heat. Add the corn and cook without stirring too often until it develops deep golden-brown/charred spots, about 5–8 minutes. Let cool slightly.
Make the dressing.
Whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, cumin, garlic, salt, pepper, and cilantro.
Combine.
In a large bowl, combine the chopped chicken, charred corn, red onion, cotija, cilantro, and jalapeño. Pour in the dressing and toss until everything is well coated.
Finish.
Taste and add more lime, salt, chili powder, or cilantro as needed. If using avocado, gently fold it in at the end.
Serve.
Chill for 20–30 minutes if you have time, then serve with warm tortilla chips and plenty of lime wedges.

Air-Fried Salmon with a Yogurt Wasabi Glaze 🐟

Looking for a quick, healthy, and delicious dinner? This Air-Fried Salmon with a creamy yogurt wasabi glaze is one you need to try! 🤤

Recipe:
2 Wixter salmon fillets (6 oz each)
½ cup Greek yogurt
1 tsp wasabi paste
1 tbsp soy sauce
1 tbsp lemon juice
1 tsp honey (I used keto honey)
1 tsp minced garlic
½ tsp salt
Black pepper, to taste
🍠 Sweet Potato Wedges
1 sweet potato
Avocado oil
Sea salt
Black pepper
Instructions:

Pat the salmon fillets dry and season both sides with salt and pepper. Preheat your air fryer to 400°F.
Mix the Greek yogurt, wasabi, soy sauce, lemon juice, honey, and garlic in a small bowl.
Reserve half of the glaze for dipping or serving.
Coat both sides of the salmon with the remaining glaze and place in the air fryer basket.
Air fry at 400°F for about 5 minutes, then flip and cook for another 5 minutes, or until the salmon is cooked through.
For a more caramelized finish, reserve a little extra glaze to brush over the salmon before flipping.
For the sweet potatoes, peel and cut into wedges. Toss with avocado oil, sea salt, and pepper.
Air fry at 400°F for 10–12 minutes, shaking the basket halfway through. Cook until crispy on the outside and tender inside.
Serve the salmon with the crispy sweet potato wedges and your reserved yogurt wasabi glaze. 🍋🥑

These Air Fryer Gochujang Chicken Bowls are packed with flavor, come together quickly, and are always on repeat! 🤌🏻 .kitchen

Marinated Chicken:
1 pack Good Life Brands boneless, skinless chicken thighs
3 tbsp gochujang paste
2 tbsp honey (hot honey for extra heat!)
3 cloves garlic, minced
1 tsp ginger paste (or freshly grated ginger)
½ tsp salt
½ tsp pepper

Chili Crisp Edamame:
1½ cups frozen shelled edamame
1 tbsp butter
1 tbsp chili crisp

For the Bowls:
Jasmine rice
½ avocado, sliced
Spicy mayo (equal parts Kewpie mayo and sriracha)
Sesame seeds, for garnish

Directions:
Combine the chicken with all of the marinade ingredients and mix well. Cover and refrigerate for at least 30 minutes, or marinate all day for even more flavor.
Preheat your air fryer to 375°F for 3 minutes.
Air fry the chicken at 375°F for 15 minutes, or until fully cooked and lightly caramelized.
Meanwhile, melt the butter in a skillet over medium heat. Add the edamame and cook until thawed, then stir in the chili crisp and cook for another 6–7 minutes until slightly crispy.
Slice the cooked chicken.
Prepare the rice, slice the avocado, and mix the spicy mayo.
Build your bowls with rice, chicken, edamame, and avocado. Drizzle with spicy mayo, sprinkle with sesame seeds, and enjoy!

🌯 Chicken Fajita Burritos... yes, please! 🤤

This is one of those easy dinners that never disappoints! Juicy chicken, tender peppers and onions, melty cheese, creamy queso, and homemade guac all wrapped in a soft, protein-packed tortilla. It's a meal the whole family will ask for again and again!

Ingredients:
🍗Goodlife Brands Chicken breasts, sliced into strips
🫑 Bell peppers, sliced
🧅 Onion, sliced
🌮 Fajita seasoning (or make your own with chili powder, paprika, cumin, garlic powder, and onion powder)
🌯Tortillas
🧀 Queso
🧀 Shredded cheese
🥑 Homemade guacamole

Directions:

Preheat your oven to 400°F.
Toss the chicken, peppers, onions, and fajita seasoning together on a sheet pan.
Bake for 15–20 minutes, or until the chicken is cooked through and the veggies are tender.
Fill your tortillas with the chicken and veggie mixture, then top with queso, shredded cheese, and guacamole.
Roll them up and enjoy!

Steak & Shrimp Hibachi 🍚🍤🥩

Prep Time: 30 minutes
Cook Time: 30 minutes
Servings: 4

Ingredients:
4 cups day-old cooked white rice
10 oz frozen mixed vegetables
3 eggs
⅓ cup soy sauce
2 tbsp mirin
2 tbsp oyster sauce
1 tbsp sesame oil
2 tbsp butter
1 tbsp minced garlic

Steak & Shrimp
1 lb flank steak, cut into bite-sized pieces
1 lb Wixter peeled and deveined shrimp
2 zucchini, sliced
1 onion, cut into chunks
Salt, pepper, and garlic powder
1 tbsp butter
1 tbsp soy sauce
1 tbsp sesame oil

For Serving
Yum Yum sauce
Sliced green onions
Sesame seeds
Directions
1. Cook the Fried Rice
Heat a lightly oiled griddle or large skillet over medium heat.
Spread the day-old rice into an even layer and cook until lightly crispy, about 7 minutes. Flip and cook for another 7 minutes.
Push the rice to one side and cook the frozen vegetables for about 5 minutes.
Scramble the eggs with the garlic, then mix them into the rice.
Stir in the soy sauce, mirin, oyster sauce, sesame oil, and butter. Mix well and remove from the heat.

2. Cook the Vegetables
Add a little oil to the griddle or skillet.
Cook the zucchini and onion until tender and lightly browned.
Stir in the butter, soy sauce, and sesame oil. Remove from the heat.

3. Cook the Steak & Shrimp
Season the steak and shrimp with salt, pepper, and garlic powder.
Cook on the hot griddle or skillet for about 4 minutes per side, or until the steak reaches your desired doneness and the shrimp are pink and cooked through.
Toss with the butter, soy sauce, and sesame oil.

4. Serve
Divide the fried rice onto plates.
Top with the steak, shrimp, and vegetables.
Garnish with sliced green onions, sesame seeds, and plenty of Yum Yum sauce.
Tips
Day-old rice works best because it fries up without becoming mushy.
Prep all of your ingredients before cooking—hibachi comes together quickly.
A large cast-iron skillet works great if you don't have a flat-top griddle.
