Pit crew or winnowing crew 🏎️

Today’s big Tuesday task is taking roasted cocoa beans and monitoring them as they turn into nibs. We use a combination cracker and winnower which moves cocoa beans from a hopper, cracks them in a modified juicer, then separates the shells from the nibs using air flow from a big shop vac.

It’s all very loud, hence the ear protection 🤪

Ask for one of these cards at the Little Market, in person on Wednesday at the Livingston Farmers Market or at our factory store on Tuesdays and Thursdays :)
