⏱️ Prep time: 20 minutes
⏲️ Cook time: 18 minutes
🍽️ Servings: 4

🛒 Ingredients
The Sheet Pan Rolls:

1 1/2 lbs large shrimp 🍤 (Peeled, deveined, and roughly chopped)

8 wrappers 🫔 (Spring roll wrappers or thick rice paper—brushing with oil gives that blistered texture)

1 cup cabbage 🥬 (Finely shredded)

2 spring onions 🧅 (Sliced)

1 tsp sesame oil 🛢️

1 tsp soy sauce 🥢

Cooking spray or neutral oil 🌻 (Essential for achieving the golden, bubbly crust)

The Savory Peanut-Sesame Sauce:

3 tbsp creamy peanut butter 🥜

2 tbsp soy sauce 🥢

1 tbsp fresh lime juice 🍋

1 tsp honey or maple syrup 🍯

1 tsp sesame oil 🛢️

Warm water 💧 (To thin to your desired consistency)

1 tsp sesame seeds ✨

The Garnish:

1/4 cup crushed peanuts 🥜

1 tbsp sesame seeds ✨

2 spring onions 🧅 (Finely chopped)

Lime wedges 🍋 (For serving)

🧑‍🍳 Instructions
Preheat & Prep 🌡️: Preheat your oven to 425°F (220°C). In a mixing bowl, toss the chopped shrimp, shredded cabbage, sliced spring onions, sesame oil, and soy sauce until well combined. 🥣

Roll 🌯: If using rice paper, briefly dip each wrapper in warm water for 5 seconds until just pliable (skip the water if using traditional spring roll wrappers). Lay the wrapper flat, place 2 tablespoons of the shrimp filling in the lower center, fold the sides inward, and roll tightly.

Bake 🔥: Place the rolls seam-side down on a parchment-lined sheet pan. To achieve the blistered, golden crust, spray generously with cooking spray or brush lightly with oil on all sides. Bake for 16 to 18 minutes, flipping halfway, until crispy and golden brown all over. No frying needed! ✨

Mix the Sauce 🥣: While the rolls bake, whisk together the peanut butter, soy sauce, lime juice, honey, and sesame oil in a small bowl. Add warm water a tablespoon at a time until the sauce reaches a smooth, dippable consistency. Stir in the sesame seeds. 🥄

Garnish & Plate 🍽️: Slice the rolls in half diagonally to expose the filling. Plate them with the peanut-sesame sauce on the side. Generously scatter the crushed peanuts, chopped spring onions, and extra sesame seeds over the warm rolls, finishing the dish with a fresh lime wedge. 🍋 Enjoy!

There is something so comforting about a simple, buttery shrimp dish that comes together in minutes.

Easy Homemade Shrimp Scampi Recipe

🛒 Ingredients:
• 2 tablespoons olive oil
• 4 tablespoons butter
• 4-5 cloves garlic (large, minced, or 1 1/2 tablespoons minced garlic)
• 1 1/4 pounds shrimp (large prawns, shelled with tails on or off)
• 1 pinch salt (to taste)
• 1 pinch cracked pepper (to taste)
• 1/4 cup dry white wine (or broth)
• 1/2 teaspoon red pepper flakes (crushed, or to taste - optional)
• 2 tablespoons lemon juice
• 1/4 cup fresh parsley (chopped)

👩‍🍳 Directions:
1️⃣ Heat olive oil and 2 tablespoons of butter in a large pan or skillet.
2️⃣ Add garlic and sauté until fragrant (about 30 seconds - 1 minute).
3️⃣ Add the shrimp, season with salt and pepper to taste and sauté for 1-2 minutes on one side (until just beginning to turn pink), then flip.
4️⃣ Pour in wine (or broth), add red pepper flakes (if using). Bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (don't overcook your shrimp).
5️⃣ Stir in the remaining butter, lemon juice and parsley and take off heat immediately.
6️⃣ Serve over rice, pasta, garlic bread or steamed vegetables (cauliflower, broccoli, zucchini noodles).
