Here's something worth knowing about the honey sitting on most grocery store shelves.
It's been pasteurized. That means it was heated to temperatures above 160 degrees Fahrenheit during processing. And here's what that heat actually does:
It destroys the natural enzymes. Studies show pasteurization can wipe out up to 90% of diastase, one of the key enzymes naturally present in honey. It degrades glucose oxidase. It strips antioxidants, vitamins, and the complex flavor compounds that make real honey taste the way it does.
What you're left with looks like honey. But it's essentially just sweet syrup.
Raw honey is a completely different thing. Cold processed honey goes from the hive to the jar without ever being subjected to that kind of heat. Every enzyme, every antioxidant, every bit of natural complexity stays right where it belongs.
That's the only kind we carry at Beelicious. Locally sourced, raw, cold processed, and handled with care every step of the way. We don't rush something this good and we don't cut corners on it either.
Come in today and taste what honey actually tastes like. We're open until 6 at 218 Elm St, Ludlow KY.
