INGREDIENTS
Makes 2 servings
• 2 Lamb Shanks
• 1 Teaspoon Kosher Sea Salt Flakes
• 1 Teaspoon Ground Black Pepper
• 1 Tablespoon 1890 UP Extra Virgin Olive Oil
• 1/2 Small Onion, chopped
• 4 Garlic Cloves, crushed
• 1 Teaspoon 1890 Jamaican Ground Allspice
• 1/2 Teaspoon 1890 Yellow Mustard Seed
• 1 Teaspoon 1890 Ground Turmeric
• 1/2 Teaspoon 1890 Organic Saigon Cinnamon
• 1/2 Teaspoon 1890 Ground Black Peppercorns
• 2 Thyme Sprigs
• 2 Organic 1890 Bay Leaves
• 1 Green Cardamom, crushed
• 2 De-Stemmed Thai Chiles
• 4 Fluid Ounces Canned, Diced Tomatoes
• 2 Cups Chicken Broth
DIRECTIONS

1. Preheat oven to 325°F.
2. Season both lamb shanks with salt and ground black pepper. Heat large oven-safe skillet over medium-high heat and add ghee.
3. Add lamb to skillet and sear on all sides, turning every few minutes for even browning. Remove lamb from skillet when browned.
4. Add onion and garlic cloves and cook for 2 minutes. Add allspice, mustard seed, cinnamon and ground black pepper and cook for 3 minutes more before adding remaining ingredients.
5. Cover pan with aluminum foil, place in oven and braise shanks for 1 hour.
6. Remove pan from oven and turn pieces over. Cover, return pan to oven and braise for another 1-1/2 hours. When lamb gives easily from bone, it is done.
7. Remove shanks from sauce, strain sauce and serve with lamb.

INGREDIENTS
• 10 Pounds Beef Brisket, Trimmed
• 1 Cup Texas Bbq Rub

DIRECTIONS

1. Trim the brisket to size, leaving 1/4” of fat cap. Thoroughly rub the brisket with the Texas BBQ Rub. Wrap the brisket and refrigerate for a minimum of 1 hour or overnight if time is available.
2. Heat a smoker to 275°F with any wood or pellets you prefer. Hickory or Mesquite is recommended. Insert a thermometer in the brisket and cook with a steady smoke until the internal temperature reaches 185°F. As a general rule of thumb, assume 45 minutes of cooking per pound of meat.
3. Once the Brisket reaches 185°F, wrap it in butcher paper and return it to the smoker. Finish cooking at 275° until the internal temperature reaches at least 204°F. Once the brisket reaches temperature, remove it from the smoker and rest it wrapped on the counter for a minimum of 30 minutes, up to 1 hour. After resting, slice against the grain and serve.

INGREDIENTS
• 2 Pork Ribs, Baby Back
• 1 1/2 Cups Sweet & Tangy Memphis Bbq Rub
• 1 Pint Water
• 1/4 Cup Apple Cider Vinegar
• 1 Tablespoon Salt
• 1 Tablespoon Black Pepper, Ground
DIRECTIONS

1. With a sharp knife, carefully peel out the membrane from the bone side of the ribs. Season the peeled ribs with salt and pepper, then rub them evenly with the Memphis Style BBQ Rub, wrap them in plastic, and refrigerate overnight or for at least 3 hours.
2. Pre-heat the oven
3. Place the ribs bone side down in a roasting pan and add 1 pint of water and apple cider vinegar to the pan. Tightly wrap the top of the pan with plastic wrap and then aluminum foil. Place the pan in the oven, cook for 2.5 – 3 hours until the ribs are tender, and pull down the bone boy ¼“- ½“.
4. Serve the ribs with your favorite BBQ side and enjoy.

• 2 cups of white vinegar
• 1 cup of water

• 2 teaspoons of 1890 Pickling Spice
Directions
1. Remove the green outer skin from the watermelon rind using a vegetable peeler. Slice the rind into 1-inch pieces.
2. In a large saucepan, combine white vinegar, water, sugar, and salt and pickling spices. Bring to a boil, then reduce to a simmer.
3. Add the watermelon rind pieces to the simmering brine. Cook for 10-15 minutes, or until the rind becomes slightly translucent.
4. Using tongs, transfer the cooked rind to sterilized mason jars. Pour the warm brine over the rinds, ensuring they are fully submerged.
5. Seal the jars tightly and let them cool to room temperature. Refrigerate for at least 24 hours before serving.

Ingredients
Makes 24 crackers
• 1/4 Cup Almond Meal
• 1/4 Cup 1890 Everything Bagel Seasoning
• 1 1/2 Cups All-Purpose Flour
• 1/2 Teaspoon Baking Powder
• 4 Teaspoons Unsalted Butter
• 1/2 Cup Skim Milk
DIRECTIONS

1. In the bowl of a stand mixer fitted with a paddle attachment, combine almond meal and Everything Bagel Blend, flour, baking powder, and butter.
2. Mix on low speed until the mixture resembles a coarse meal.
3. Stir in milk, and mix until mixture forms a soft dough.
4. Wrap dough in plastic wrap and chill 10 minutes.
5. Preheat oven to 350° F.
6. Divide dough into quarters. Turn out one quarter onto a lightly floured work surface. Roll out into a very thin rectangle 1/16th inch thick. Cut into 2-1/2-inch squares.
7. Transfer to an ungreased, parchment-lined baking sheet. Repeat with remaining dough.
8. Bake for 10 to 12 minutes, or until golden and crispy. Cool completely before serving or storing.

Step-by-Step Instructions
Hard-Boil the Eggs:
1. Boil the Eggs: Place eggs in a saucepan and cover with cold water. Bring to boil, then turn off the heat, cover, and let sit for 10 minutes.
2. Cool and Peel: Transfer eggs to an ice bath for 5 minutes, then peel the shells carefully.
Pickle the Eggs:
3. Prepare the Pickling Liquid: In a bowl or jar, mix beet juice, apple cider vinegar, water, sugar, and salt. Stir until dissolved.
4. Submerge the Eggs: Place peeled eggs in the liquid, ensuring they are fully submerged.
5. Refrigerate: Let the eggs pickle for at least 2-3 hours or up to 24 hours for a deeper color.
Prepare the Deviled Egg Filling:
6. Slice the Eggs: Remove eggs from the pickling liquid and pat dry. Slice them half lengthwise.

INGREDIENTS
Makes 2 to 3 servings
• 1 Tablespoon Olive Oil
• 2 Garlic Cloves, minced
• 1 Teaspoon Lime Zest
• 1 Tablespoon Salsa Verde Seasoning
• 2 Cups Cooked Chicken, shredded
• 1/2 Cup Sour Cream
• 1/2 Cup Cheddar Or Monterey Jack Cheese, shredded and divided
• 1/4 Cup Fresh Cilantro, chopped and divided
• 6 Corn Tortillas
DIRECTIONS

1. Preheat oven to 350°F.
2. Heat large skillet over medium heat. Add olive oil, garlic and lime zest and cook until fragrant, about 30 seconds.
3. Add Salsa Verde Seasoning Blend and stir well. Remove from heat. Stir in chicken, sour cream, 1/4 cup cheese and 1/8 cup cilantro.
4. Add 2 to 3 tablespoons sauce to bottom of 9-inch by 9-inch baking dish, reserving 1 cup sauce for topping enchiladas.
5. Add about 2 tablespoons chicken to center of each tortilla and roll, placing seam-side down in baking dish. Cover tortillas with remaining 1 cup sauce and remaining 1/4 cup cheese.
6. Transfer dish to oven and bake until heated through and cheese is melted on top, about 20 minutes.
7. Top enchiladas with remaining 2 tablespoons cilantro and serve.
