Another starter born this morning

Sophie is from an Italy starterā£ļø

She arrived on Friday. But I had to get some new jars so she has her own special jar to get started in šŸ˜‰

She should be ready in the next 7-10 days

To Build Enough for 2 Cups
Two cups of starter is approximately 450–500g.

When your starter is mature:

Feed 50g starter

225g flour

225g water

Total: about 500g starter (roughly 2 cups)

Let it rise until doubled, then use what you need.

Even Better: Keep a Tiny Starter
Many home bakers keep only:

20g starter

20g flour

20g water

in the refrigerator.

The day before baking, build it up:

20g starter
→ feed 40g flour + 40g water = 100g

Then:

100g starter
→ feed 200g flour + 200g water = 500g

This gives you plenty for baking without throwing away cups of starter every week.

How to build a simple small sourdough starter without the typical large daily discard. For a home baker, especially if you're making friendship breads and smaller batches, a "micro starter" method works really well.

Day 1
Mix:

10g flour (about 1 tablespoon)

10g water (about 2 teaspoons)

Stir into a small jar. Cover loosely.

Day 2
Add:

10g flour

10g water

No discard.

Day 3
Add:

20g flour

20g water

You may start seeing bubbles.

Day 4
If it's showing activity:

Keep only 20g starter

Feed 20g flour

Feed 20g water

This creates a tiny amount of "discard" (only a spoonful), but prevents the jar from becoming huge.

Days 5–7
Continue daily:

20g starter

20g flour

20g water

Once it reliably doubles in 4–8 hours after feeding, it's ready to bake with.

If you know, you know!

I have been on the hunt for a San Francisco Sourdough Starter for quite some time now, without having to order it. I looked up many places along our route on vacation & wasn't having much luck.
We made a stop in Reno, NV to eat. I did some searching online while in Reno & well, I hit the "JACKPOT" while there & found a place that sells it!! šŸ™Œ
So, I decided to name this starter Rubi ā¤ļø
She will be started when we get back home in a few day. I'm super excited to try a brand new starter ā˜ŗļø

Happy Monday Friends 🧔

Don't come at me to hard, but I'm extremely happy with my sourdough bread today!
I baked it early this morning & left it to cool until I came home for my lunch break. I know I need to practice scoring a bit deeper. The bread is crispy outside, tender inside. My last 3 loafs have come out super gummy. I'm confident I've got my starter where it needs to be. Stretch & folds are bit hard for me yet. I'm sure I could of done better. I started last night. Let her ferment on counter until about 11:30 p.m. I woke up to check & she was doubled in size so I went ahead and shaped her & put in fridge until 8 a.m. I know I should of probably just let her sit in fridge until this evening after work. But, overall, I think she baked pretty beauty!

Hello Hello Friends!

I hope each & everyone one of you enters the new year with many blessings!

I'm going to be some what embarking on a bit of a new journey. I'm going to start handmaking more items to sell. I'm also going to be doing a bit more baking & selling as well. I'm rolling into the new year with a fresh sourdough starter & friendship bread starter I made this evening. šŸ˜‹
It's literally been several years since I've done friendship bread.

I might even try to do a few lives. I'm trying to get over my fear of going live. šŸ˜‰
