I harvest my potatoes as I need them cuz I don’t have a good place to store them in the house. I don’t wash them when I bring them inside. They hang out on a tray in my kitchen for a few days to dry up. I have a designated little brush to clean them right before I cook them. I use them up before I take the next batch out of the ground. I cover the potato bed in the winter so I can keep harvesting. Works great!
