Week 4 already — it feels like we just rolled open our doors yesterday. It’s been incredibly special getting to know so many of you who’ve given us a chance and chosen to dine with us. Your support, reviews, and feedback have been overwhelming in the best way.

From the start, as we developed our concept and built our team, we felt something special taking shape. To now see that the intention behind both the food and the space is resonating with you, it’s made every step of the journey worth it.

I hope we never lose these early emotions, or forget what it means every time you choose to spend a few hours with us.

Introducing Caballo Negro — a dark Mexican-style lager brewed in collaboration with the legends at !

Rich caramel and cocoa notes meet a touch of noble hops for a smooth, balanced finish. It’s the perfect pairing for the bold, smoky flavors of our wood-fired cooking.

Releasing this Friday in cans and on tap — just in time for Cinco de Mayo weekend at ! This is a limited release, so once it’s gone, it’s gone. Come grab a pint and celebrate with us this Friday and Saturday!

Chilaquiles and our Maracuya Matcha.

Working with our coffee team to build the coffee and breakfast menu has been really special. From the start, our intention was to bring whole, quality ingredients into a space typically focused on speed and efficiency. Our signature Maracuya Matcha includes half a freshly cut passionfruit in each glass and ceremonial-grade matcha. Pair it with our mint green salsa chilaquiles, and it’s hard to beat.

We’re open 7am–2pm, Tuesday to Saturday, with comfy seats and good wifi. Come work or hang as long as you’d like!

Building this team has been the highlight of our journey with Hearth. From day one, we set the bar high—both in expectations and in the kind of culture we wanted to create. Redefining hospitality isn’t easy, and we knew it would all come down to the people we brought on board.

Every person in this photo represents the vision and values at the core of Hearth. They’re hardworking, eager to learn and grow, and most important of all, they love people well. I’m incredibly grateful for each of them and excited to watch them grow—both in their roles and as individuals.

Hearth is no longer just a pop-up—we’re officially a restaurant.

This past weekend was both our biggest pop-up to date and, somehow, also our smoothest—and it was also our last. It’s bittersweet to close this chapter, but it couldn’t have ended on a higher note. I’m so proud of our team—they’ve trained hard, put in the late hours, served with love, and are more than ready to run a restaurant.

If you had told me two years ago that Kellie and I would be opening our own place, I never would have believed you. This has been a true labor of love, worth every drop of sweat and every tear along the way.

This journey has introduced us to some of the best people from all walks of life—each of you has played a part in getting us here. And now, in just a couple of weeks, we’ll finally be opening our doors.

Grand opening details are coming very soon, and trust me, we’re planning something special. Keep your eyes peeled!

From the bottom of our hearts, thank you for your support. It means everything to us. You are why we do this.
