Honey begins as nectar.
And nectar isn't the same from every flower.

Different plants produce nectar with different sugars, minerals, aromas and other naturally occurring plant compounds.

That means the flowers available to the bees can influence nearly everything about the finished honey.

โ€ข Color, honey can range from nearly clear to golden, amber, reddish brown and extremely dark
โ€ข Flavor, some honey is delicate and mild, while others can be rich, fruity, earthy, spicy or even slightly bitter
โ€ข Aroma, open two jars from different nectar sources and you may notice completely different smells
โ€ข Crystallization, some honey crystallizes quickly while other honey can remain liquid much longer
โ€ข Chemical composition, different nectar sources can produce different concentrations of minerals, acids and plant compounds

And here's where it gets even more interesting.

That's why honey harvested in the spring may look and taste completely different from honey harvested later in the summer.

I like to tell people to think of it like food.

Spring and summer tend to bring lighter, brighter flavors, fresh berries, melons, garden vegetables and greens.

Fall brings pumpkins, squash, root vegetables, spices and those deeper, richer flavors we associate with cooler weather.

Honey can be similar.

As the seasons change, the plants available to the bees change. And with them can come completely different colors, aromas and flavors in the honey.

Unless bees are surrounded by a dominant nectar source, they're visiting whatever is blooming within their foraging range.
