The fastest IKEA cabinet putter together in the West. I have two more that need to be delivered and assembled, then these will all be mounted at cabinet height below a row of beautiful grain silos.

Today I picked up my first batch of shelf stable organic food that will be offered soon at Sifted Refillery. It's just scratching the surface, but feels like a significant moment regardless!

I just keep thinking how if I could talk to me from even two years ago and tell her that we were opening this store, I would never believe it. But, in fairness, I know I'm a liar so how could I believe a future version of myself about anything?

Something shifted for me when I stopped thinking about my pantry as a place to store food and started thinking of it as a place to store ingredients.
The goal I keep coming back to is what I call a "cantry", stocked with fresh, whole foods that are the building blocks for anything my family wants to eat. Bread. Granola. Peanut butter. Ketchup. Snacks, meals, condiments; all from the same small collection of real ingredients.

When your shelves have whole oats, good nuts, basic flours, and real sweeteners, you stop running to the store for 47 different packaged things. You just make what you need. And I swear, it's doesn't have to be overwhelming. Just one thing at a time, and stop when it feels like a good balance.

This is the version of self-sufficiency that I'm chasing. Not a homestead, not a perfect kitchen, just a well-stocked pantry and the basic skills to use it.
