Our goal is to make the very best tasting tortilla. And because we are so focused on delivering to you the very best quality tortilla, we have been named by the Omaha World Herald as the best tasting tortilla in Omaha, Nebraska, for 8 out of 10 years. And we are just not a favorite in Nebraska! Mi Mamas tortillas can also be found at select retailers in Iowa, Minnesota, Illinois, Kansas, Colorado,

Oklahoma, South Dakota, Missouri, and Texas. This Summer spice up your dinners with some delicious Tacos Al Pastor! Made Mi Mama’s homemade tortillas!

🌮 Tacos al Pastor Recipe

🔥 Ingredients

For the Marinade:
• 3 dried guajillo chiles (stemmed and seeded)
• 2 dried ancho chiles (optional for deeper flavor)
• 1 cup pineapple juice
• 2 cloves garlic
• ½ white onion, chopped
• 2 tbsp white vinegar
• 1 tbsp achiote paste (or 1 tbsp annatto powder)
• 1 tsp dried oregano
• 1 tsp ground cumin
• 1 tsp salt
• ½ tsp black pepper
• 1 tbsp brown sugar
• Juice of 1 orange (optional for added citrus)

For the Meat:
• 2 to 2.5 lbs pork shoulder or boneless pork butt, sliced thin

For Cooking:
• 1 cup pineapple chunks (fresh or canned)
• Oil for cooking (if using a pan or skillet)

For Serving:
• Corn tortillas
• Finely chopped onion
• Chopped cilantro
• Lime wedges
• Salsa (your choice)



🧑‍🍳 Instructions

1. Prepare the Marinade
• Toast the dried chiles in a dry skillet for about 1-2 minutes until fragrant.
• Soak the chiles in hot water for 10–15 minutes to soften.
• Blend the soaked chiles with pineapple juice, garlic, onion, vinegar, achiote paste, spices, and orange juice until smooth.

2. Marinate the Pork
• Place thinly sliced pork in a large bowl or zip-top bag.
• Pour marinade over the pork and mix well.
• Cover and marinate in the fridge for at least 4 hours, preferably overnight.

3. Cook the Pork
• Option 1: Skillet or Grill
Heat a skillet or grill over medium-high heat. Cook the marinated pork in batches until charred and cooked through (about 3-4 minutes per side). Add pineapple chunks during the last few minutes to caramelize them slightly.
• Option 2: Oven (more traditional layering method)
Layer pork slices and pineapple on a lined baking sheet, then bake at 375°F (190°C) for 25–35 minutes. You can broil for the last few minutes to get crispy edges.

4. Assemble the Tacos
• Warm corn tortillas.
• Add cooked pork and pineapple.
• Top with chopped onion, cilantro, and a squeeze of lime.
• Add salsa if desired.

Mi Mama’s Summer Recipes:

Baja fish tacos

**For the Fish:**
- 1 lb white fish fillets (such as cod or tilapia)
- 1 cup flour
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup buttermilk
- 1 cup breadcrumbs
- Vegetable oil (for frying)

**For the Cabbage Slaw:**
- 2 cups shredded cabbage
- 1/2 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 1 tbsp lime juice
- 1 tsp honey
- Salt and pepper to taste

**For the Sauce:**
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 tbsp lime juice
- 1 tsp hot sauce (optional)
- 1/2 tsp garlic powder
- Salt to taste

**For Serving:**
- Mi Mama’s Corn or flour tortillas
- Lime wedges
- Extra cilantro (optional)

Instructions:

1. **Prepare the Fish:**
- Mix the flour, paprika, garlic powder, onion powder, cumin, salt, and pepper in a bowl.
- Dip the fish fillets in buttermilk, then dredge them in the seasoned flour mixture, coating evenly.
- Dip again in buttermilk, then coat with breadcrumbs.

2. **Cook the Fish:**
- Heat vegetable oil in a large skillet over medium-high heat.
- Fry the fish fillets for about 3-4 minutes per side, or until golden brown and cooked through.
- Remove from oil and drain on paper towels.

3. **Prepare the Slaw:**
- In a large bowl, mix together cabbage, carrots, cilantro, mayonnaise, lime juice, honey, salt, and pepper.
- Toss until well combined.

4. **Prepare the Sauce:**
- In a small bowl, mix together sour cream, mayonnaise, lime juice, hot sauce (if using), garlic powder, and salt.
- Adjust seasoning to taste.

5. **Assemble the Tacos:**
- Warm the tortillas in a dry skillet or on a grill.
- Place a piece of fried fish on each tortilla.
- Top with cabbage slaw and a drizzle of sauce.
- Garnish with extra cilantro and lime wedges if desired.
