Summer is the perfect time to mix up this chicken salad for a light lunch. Select fresh bakery croissants or your favorite multi- grain bread. For GF - fresh romaine will be a nice addition. Top it off with fresh fruits and vegetable tray.

*We prefer to bake boneless chicken breasts with seasoning when we make this. However, if you want to keep this simple - purchase a rotisserie chicken. Keep it simple and do what is best for you.
