Meet the Penicillin

A modern classic with a little history—and a lot of character.

Our Penicillin brings together Scotch, house-made honey syrup, house-made ginger syrup, and fresh lemon juice for a beautifully balanced combination of smoky, sweet, spicy, and citrusy flavors. Served over a large ice cube and finished with a piece of candied ginger, every sip offers something a little different.

Created by bartender Sam Ross in 2005 at Milk & Honey in New York City, the Penicillin was inspired by the Gold Rush cocktail and has since become a modern classic. Fun fact: its name is a playful reference to the drink’s soothing combination of honey, ginger, and lemon—giving it a reputation as something of a cocktail “cure-all.”

If you enjoy Scotch—or even if you’re still discovering it—the Penicillin is a wonderful place to start. The bright lemon and rich honey soften the Scotch, while ginger adds a warm, lively spice and a subtle smoky finish.

THE ZOMBIE 🧟‍♂️

One of our newest cocktails at Somerset Schoolhouse: The Zombie — a legendary tiki classic with a house-made twist.

Crafted with Havana rum, Falernum, house-made cinnamon syrup, house-made grenadine, pineapple, grapefruit, and fresh lime, then finished with a Diplomático rum floater. Garnished with a fresh mint bouquet and frozen pineapple, and served in a fun, one-of-a-kind tiki glass. Also available as a mocktail!

🍍 What does it taste like?
Tropical, citrus-forward, and wonderfully complex. Bright pineapple and grapefruit mingle with fresh lime, while cinnamon and grenadine add warmth and a touch of sweetness. The layers of rum bring depth and a rich finish, balanced by the refreshing aroma of fresh mint.

🧟‍♂️ Fun fact: The original Zombie was created in the 1930s by tiki pioneer Donn Beach at his famous Don the Beachcomber restaurant. It became so popular—and so potent—that some bars famously limited guests to just two!

🚨 HELP US SOLVE THE CASE OF THE MISSING RED PHONE BOOTH! ☎️🚨

Okay, Somerset… we need your help. 😂

Sometime around 4:20 AM last night, a truck pulled RIGHT BACK INTO OUR FRONT YARD and a singular, very determined man decided our London-style RED PHONE BOOTH looked like something he absolutely needed in his life.

So what did he do?

He picked it up, threw it in the back of his truck, and drove away. 😳

Yes. You read that correctly.

Someone really woke up at 4:20 AM and thought, “You know what would make my night better? A whole-ass British phone booth.” 🇬🇧☎️😂

But seriously — this was stolen, and we’d really like to get it back. We have video of the truck and the man involved, and there is a reward for information that helps us identify the person and/or recover the phone booth. 💰
