Christmas Eve Cinnamon-Vanilla Creamy Custard Pie

Ingredients:

- 1 unbaked 9-inch pie crust
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 4 large eggs
- 1 tablespoon cornstarch
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt

Directions:

1. Preheat oven to 350°F (175°C).
2. In a medium saucepan, combine whole milk, heavy cream, and granulated sugar. Heat over medium heat until it begins to steam, but do not boil.
3. In a separate bowl, whisk the eggs with cornstarch until smooth.
4. Slowly pour the hot milk mixture into the eggs while continuously whisking to temper the eggs.
5. Pour the combined mixture back into the saucepan. Cook over low heat, stirring constantly until the custard thickens and coats the back of a spoon. Remove from heat.
6. Stir in vanilla extract, ground cinnamon, nutmeg, and salt. Mix well.
7. Pour the custard into the unbaked pie crust.
8. Bake for 50-60 minutes or until the custard is set but still slightly jiggly in the center.
9. Remove from oven and let cool to room temperature, then refrigerate for at least 3 hours before serving.

- 14 ounces sweetened shredded coconut
- 10 ounces maraschino cherries, drained and chopped
- 3 cups pecans, chopped
- 6 cups semi-sweet chocolate chips
- 4 tablespoons shortening

Directions:

1. In a large mixing bowl, cream the softened butter and vanilla extract together until smooth and fluffy.
2. Gradually add the sweetened condensed milk and mix well.
3. Add powdered sugar, shredded coconut, chopped maraschino cherries, and chopped pecans to the bowl; mix thoroughly until the mixture forms a soft dough.
4. Using your hands or a small cookie scoop, form the mixture into bite-sized balls and place them on a parchment-lined baking sheet.
5. Refrigerate the bites for at least 1 hour to firm up.
6. In a microwave-safe bowl, combine the semi-sweet chocolate chips and shortening. Melt in 30-second intervals, stirring between intervals until smooth.
7. Using a fork or dipping tool, dip each chilled bite into the melted chocolate, ensuring it is fully coated.
8. Place the chocolate-coated bites back onto the parchment-lined sheet and refrigerate until the chocolate is set, about 30 minutes.

New Orleans Pecan Clusters

Ingredients:

- 2 cups pecan halves
- 1 cup caramel bits or soft caramel candies
- 2 tbsp heavy cream
- 1½ cups chocolate (milk, dark, or white)
- Optional: sea salt for sprinkling

Directions:

1. Line a baking sheet with parchment paper or a silicone mat.
2. In a small saucepan, combine caramel bits and heavy cream over low heat, stirring constantly until the caramel is melted and smooth.
3. In a microwave-safe bowl or double boiler, melt the chocolate until smooth, stirring frequently to avoid burning.
4. Toss pecan halves in the melted caramel until well coated.
5. Using a fork or spoon, scoop clusters of caramel-coated pecans onto the prepared baking sheet.
6. Drizzle or dip each cluster in melted chocolate, ensuring they are thoroughly coated.

- 1 teaspoon vanilla extract
- 0.25 teaspoon salt
- 0.5 teaspoon ground cinnamon (optional)
- 2 cups quick oats

Directions:

1. In a large saucepan over medium heat, melt the butter, brown sugar, and sweetened condensed milk, stirring frequently until the mixture comes to a gentle boil.
2. Allow the mixture to boil for 1-2 minutes while stirring constantly, then remove from heat.
3. Stir in the vanilla extract, salt, and ground cinnamon if using.
4. Add the shredded coconut, chopped pecans, and quick oats, mixing until well combined.
