For W**e Wednesday this week, we’re excited to welcome Proteus W**es , a tiny estate on Chehalem Mountain built out of loss and a long-held tradition of doing this together. Bailey Mayer spent 17 years in Philadelphia with his husband before losing him to epilepsy — and after, Bailey left that life behind for Oregon, bringing three dogs and a longtime ritual of harvesting and bottling w**e with friends at potlucks. That ritual became Proteus: low yields, native-yeast fermentation, minimal filtration, and a name borrowed from the shape-shifting sea god — grapes becoming w**e, one life becoming another.
He’ll be here THIS WEDNESDAY from 5–7 pouring four w**es that carry that story with them, including a vinho verde–style white made in tribute to a trip to Portugal he and his husband took together. Join us this Wednesday (TOMRORROW) AUG 19 at 5 to meet Bailey and taste through these four lovely w**es!
THE LINEUP:
🥂 2022 Brut Rosé – strawberry, rhubarb, and rose petal with a lift of citrus zest, wild berry and white peach on the palate, crisp and dry with red currant and mineral notes
🍋 2025 Legacy Vinho Verde – bright and green, citrus and crisp acidity, made as a tribute to that trip to Portugal
🧡 2025 Ramato Pinot Gris/Chardonnay – extended skin contact produced notes of apricot and nectarine flesh, salty minerality, tangerine skin and a whisper of saffron
🍒 2024 Valley Pinot – black cherry and wild strawberry, a little baking spice, silky tannins
