Oklahoma smash burgers are fast, easy, and the best way to cook a burger. I’ll fight in the comments on this one all day. These don’t even need seasonings. No salt, no pepper, no garlic. Recipe below!
1/4lb balls of ground beef
Thinly sliced onions
Stack two spatulas and SMASH
Flip when onions brown on edges
Cheese
Toast buns
THINLY sliced lettuce!!!.
Need a searing hot griddle or large cast iron. DOUBLE stack patties for the hungrier folks.

Recipe below!!! Inspired by a Peking beef bowl, this one combines some staple Asian ingredients that we use routinely. You can substitute allspice for 5 spice, and honestly you may find yourself using rice vinegar in place of standard white vinegar routinely!

Start the rice first, make sauce, start beef/onions, pour sauce on and simmer to thicken, cut cucumbers, assemble.

JASMINE RICE
2.25 cups of water
2 cups jasmine rice
Combine in pot, high heat, no lid. When it starts to boil, stir once, pop on the lid, cut to lowest heat possible and start a 12 min timer. Fluff. Put lid back on until assembly

BEEF
1lb ground 🥩 or beef mince
Salt/pepper
Large shallot or medium 🧅 diced
Brown beef, onions in half way.
Add sauce, simmer for a few minutes. Cut heat. Let it thicken for a few more.

SAUCE
3 tbsp soy sauce (dark soy as well if around)
3 tbsp hoisin sauce
1 tbsp rice vinegar
1-2 tsp packed brown sugar
1/2 tsp allspice or 5 spice
Chili crisp, Sri racha optional
Combine all the ingredients and stir.

ASSEMBLY
Add rice. Add beef to other side. Ribbon slice your cucumbers (Persian) and roll them into manageable bites. Or cut slices! I used a box graders slicing side for the cucumbers
Sesame seeds, green onions, and more sauce or condiments! Makes a great meal prep.

Our Bahn mi, using tenderized cuts, chuck, flank, anything
Recipe ⬇️
Make/buy your own bahn mi rolls (call a local restaurant) or sub bollilo. Either way, bread should be warm and potable not flakey. Chewy is ideal. A good sourdough works. Open the roll without cutting in half and flatten insides.
Butter and mayo the rolls
My Vietnamese beef
1/2 tsp of quality fish sauce (anchovies, sea salt, no msg) per serving of beef
1/2tsp of soy sauce per serving of beef
1-3 cloves garlic per pound of beef, to taste
Tsp per pound of minced lemongrass
1 large shallot or 1 small onion per pound minced
To room temp, or fridge overnight
Grill or stir fry or cast iron saute
Pickled daikon and carrots
2 large carrots shredded/vegetable peeler
1 medium daikon same
3/4 cup water simmering
Add 2 tbsp sugar to water
Add 1 tbsp salt
Turn off heat
Add 3/4 cup rice vinegar
Add shredded veggies. Cold pickle for 2 hours for crunchy soft snap or keep on low heat for a few min then cut heat, put on lid and wait 5 min. Pour into container for use and storage
Cucumber
Jalapeño
Cilantro (load it up)
Pickled veggies
Fried egg?
Hoisin sauce
Soy sauce
Sriracha
These make great meal preps and can come from any cut of beef. Leftover bbq, steak, even ground.
