Today's tidbit... If you have ever wondered why one tea tastes light and floral while another is malty, brisk, or full-bodied, part of the answer begins on the stem.
Tea makers pay close attention to the newest growth at the end of each branch. This fresh growth is known as the flush: the bud and the first two young leaves below it. This is the most prized part of the plant for good reason. The bud and youngest leaves are tender, rich in catechins and aromatic compounds, and especially responsive to processing. In many fine teas, the plucking standard is quite specific. A tea described as “one bud, two leaves” reflects a classic harvest approach that captures both delicacy and structure. As you move farther down the stem, the leaves grow larger, thicker, and more fibrous. These mature leaves still have an important role to play, but they behave differently in processing and often produce teas with more body and strength than nuance.

Today's tidbit... Our featured tea is "Young Hyson" from Oliver Pluff & Co. A Chinese green tea beloved by American revolutionaries, this tea was among the most heavily taxed imports before the revolution. Crisp and warm, it offered a refreshing contrast to the turmoil of the time—and was one of the teas destroyed during the Boston Tea Party. It has a light & sweet, spring-like in flavor. Young Hyson (picked in spring) is considered a higher quality tea than Hyson. Available in loose leaf or tea bags, stop in and pick up a tin of this delicious tea today!

Today's tidbit... Our featured tea is "Colombian - Leafy Organic" from Simpson & Vail Tea Company. From the mountainous region of Colombia, in an area steeped in biodiversity, along the western slope of the Andes is the Bitaco tea estate. The gentle mist from the mountains, rich soil, and ample rainfall all stimulate the growth of the tea bushes, producing a tea with unique characteristics.
