Roasted Asparagus with Blistered Tomatoes, Mozzarella & Balsamic Glaze
There's something special about taking fresh summer ingredients and transforming them into a warm, comforting side dish. The asparagus becomes perfectly tender with just the right amount of bite, the cherry tomatoes roast until they're sweet and juicy, and the melted mozzarella creates creamy pockets of goodness throughout. Finished with fresh basil and a drizzle of balsamic glaze, every bite is packed with flavor.
Start with 1 lb of asparagus, trimmed and arranged on a baking sheet. Drizzle with 2 tablespoons of olive oil, then season evenly with 1 teaspoon salt and 1/2 teaspoon black pepper, making sure every spear is lightly coated. Roast in a preheated 400°F oven until the asparagus begins to soften while still maintaining a slight crispness.
Remove the baking sheet from the oven and scatter 1 cup of halved cherry tomatoes and 1 cup of fresh mozzarella pearls over the asparagus. Return the pan to the oven and continue roasting until the tomatoes begin to blister and the mozzarella melts into soft, creamy pockets throughout the dish.
Transfer everything to a serving platter while still warm. Sprinkle 1/4 cup of freshly chopped basil over the top and finish with a generous drizzle of 2 tablespoons balsamic glaze. The sweet and tangy glaze perfectly balances the savory vegetables and creamy cheese, bringing all the flavors together beautifully.
For the best results, choose thicker asparagus spears. They hold up better during roasting, support the toppings more easily, and stay tender without becoming overly soft. Serve warm and enjoy a side dish that's fresh, vibrant, and guaranteed to disappear quickly.
