We had bbq soy curl sandwiches for dinner last night and pita bread leftover from lunch yesterday so we turned them into personal pizzas! Made my hubby lunches for work this week. Amazing recipe from Nourish Bowl Vegan Meal Prep. Brown rice, steamed kale, roasted sweet potato, black beans with a spicy cashew cream sauce to eat over the top! I can see why she says this is her fave. I was stealing sweet potatoes off the tray and dipping them in the cashew cream sauce. YUM!

Enchiladas for dinner with my favorite chicken substitute....soy curls! Finally ordered more on amazon and the first thing my kids wanted was enchiladas! I just took my favorite chicken enchilada recipe and veganized it. Super easy!
