It’s been a busy busy week in the meat shop!

Processed 7 pigs last weekend, 2 beef, 2 lambs an elk and 25 or so deer.

Alex made 200+ lbs of brats today and we made 200lbs of snack sticks and 100lbs of summer sausage yesterday plus smoke 150lbs of bacon today.

Lots and lots of work and we are just barely into October.

Now Deb White and I are on our way to pick up a new meat grinder from Hines Meat Company. Finally getting a good solution to a grinder issue. Thank goodness we didn’t sell the little one to Kevin Tedder like we planned on a couple years ago. We would’ve been sunk!

Eternally grateful for all the work that has come our way this year! We couldn’t have done it without all of your support. Not to mention the help from Peggy, Renee, Holdner James and many many more. The list is long.

So we follow a lot of different butcher shops and get lots of little nuggets of information.

Some of what to do and some of what not to do 🤷🏻‍♂️🤷🏻‍♂️🤷🏻‍♂️

One of the best recent little nuggets was from the Bald Brothers Butcher Shop.

They run a grinder plate called the “Bone Collector”. At first I wasn’t much of a believer, but I tell ya, after watching their demo videos, I decided to give it a whirl.

What a game changer!

The pic is hard to tell, but this is approximately 2lbs of bone, hard gristle, sinew and silver skin that normally would have found its way into the grind. Not with the bone collector plate tho!

This was after running somewhere around 6-800lbs of meat today.

This will help us make the best all around ground products around!
