While the word āhamā came much later from Old English roots, the technique of curing pork legs dates back thousands of yearsāespecially in ancient China, where early records show pork being preserved as early as 4900 BC.
Over time, cultures around the world developed their own methodsāsalting, smoking, agingāall in the name of flavor and preservation. What we know today as āhamā is the result of centuries of tradition and craftsmanship.
