Lefse is Minnesota's most beloved Scandinavian food tradition and the flatbread that Norwegian immigrant communities brought to the upper Midwest in the late 1800s and that Minnesota has been making, eating, and defending ever since. It is a soft potato flatbread cooked on a griddle, rolled thin enough to see through, and served with butter and sugar in a combination so simple and so completely right that generations of Minnesota families have built holiday traditions entirely around it.

The making of lefse is a production. It requires a lefse griddle, a grooved rolling pin, and a turning stick, specialized equipment that Minnesota households own and store specifically for this purpose. The potato dough has to be cold. The rolling has to be thin. The cooking has to be watched. Getting lefse right requires attention and practice and the patience of someone who learned it from someone who learned it from someone else and takes the responsibility of continuing that chain seriously.

Christmas and Thanksgiving tables in Norwegian Minnesota households are not complete without lefse. It gets made in large batches because demand always exceeds supply and because the making of it is itself a gathering activity that families do together in kitchens that smell like butter and warm potato and something older than any recipe written down.

Minnesotans who grew up with lefse carry it as a specific and irreplaceable sensory memory. The soft texture, the slight tang, the butter melting into it while it is still warm from the griddle. It is simple food made meaningful by repetition across generations and Minnesota protects that tradition with the specific devotion of a state that understands what it means to keep something alive.

What are roller coaster this year has been! It is holiday time again and that means time for home made lefse!! I am now taking orders for the 2025 holiday season.

Lefse is sold frozen in packages of 10 rounds for $13/pkg. Order 5 or more and the price drops to $12/pkg. My lefse is made with locally sourced real potatoes and frozen same day it is made to help maintain freshness.

Hard to believe it is holiday time again. That means time fir home made lefse!! I am now taking orders for the 2023 holiday season. Unlike many other things these days, my prices have managed to stay the same as last year.

Happy Potato Day!! Well at least here anyway. It's that time of year again....lefse time!! Super excited to once again, be able to get my potatoes from Prairie Farms in Rice. Very grateful to them. This year my pricing is going to be $12 for a package of 10 rounds.
