Sorry, I don't sell oysters, but I love to eat them! I was at the watermen's trade show today in Ocean City, and a couple guys told me they've been struggling to sell their oysters this season. If you have'nt tried frying oysters you should. Here's how I do it, and this is how my mom does it too:
1. Buy a pint or two of "select" oysters. They are bigger and better for frying. Drain the oysters.
2. Bowl of flour. Bowl of eggs, beat with some milk and Worcestershire Sauce. Bowl of fine cracker meal. It's tough to find fine cracker meal, so you might try making your own. Cracker meal is my favorite breader for oysters.
3. Dip each oyster in the flour, egg, then cracker meal. Don't be too rough with the oysters.
4. Let the breaded oysters sit in the fridge if you have time. If not, fry em.
5. Heat some Canola oil to 350.
6. Fry them for a few minutes. Turn them over if you need to. Do not crowd the pan with too many oysters, six in a 20" pan is good.
7. Remove the oysters with a slotted spoon. I let the oyster sit for a bit, and then I top em with salt, pepper, and Old Bay.
8. They're ready to eat. If you did it right you don't need to dip them in anything. A side of lima beans goes well with fried oysters.

Water temperature is 61° on the Eastern Shore rivers I like to crab. It was 42° here this morning. Maybe a couple weeks left to get em on the trotline, but I'm calling it a season. I ate a few today, then I packed the crabbing gear in the shed til April '26. Can't wait!

I start running my trotlines one hour before sunrise. Here's my first trip down an 800' line I had out. I had two other lines, 2600 feet combined. A few times this summer I used as much as 4800. Some crabbers run 10,000.

Most of these crabs were heavy .
