NATIONAL HOMEMADE SOUP DAY
February 4th heats up with National Homemade Soup Day. In every cuisine, soup provides a rich basis of flavor and history.
Before the era of modern transportation, soup was a product of regionally available foods. For this reason, there are thousands of soup recipes available today.
Many soups also offer medicinal properties. What was once considered a wiveās tale, chicken soup now has the backing of the scientific community. Yes, chicken soup helps relieve the symptoms of the common cold. How? Well, scientists believe that a bowl of the soup may reduce inflammation of the lungs. It is thought that chicken soup slows down the activity of white blood cells that can cause inflammation.
But thatās not all homemade soup does. Every cook knows the most important ingredient that goes into every pot of simmering soup. They keep the ingredient stored where it will do its best work, too. As they work, they season the soup from their heart giving it just the right amount of love each and every time. Whether they add it with the noodles or the vegetable, the broth or the cream, each cook knows thereās enough to go around. Thatās why homemade soup heals the best.

From chowders and broths to creamy bisques, I found a few recipes to give a try on National Homemade Soup Day.
CHICKEN and CORN CHOWDER
Ingredients:
3 strips bacon, roughly chopped
1 medium onion, diced
3 tablespoons flour
One 15-ounce can chicken broth
3 cups milk
3 ears white corn, kernels removed and cobs reserved or equivalent 15 oz can corn
2 sprigs fresh thyme
2 1/2 cups shredded chicken from store-bought rotisserie chicken
Salt and black pepper
Directions:
In a large pot over medium heat, add the bacon and cook until browned, about 5 minutes. Add the onions and cook until softened, about 5 minutes. Add the flour, stirring constantly for 1 minute, until the flour is just slightly golden. Slowly add the chicken stock, whisking constantly to avoid lumps. Whisk in the milk and add the corn cobs and thyme to the pot. Bring to a simmer and cook about 15 minutes, stirring occasionally to infuse the corn flavor into the soup. Remove the cobs and thyme from the pot. Stir in the corn kernels and shredded chicken. Bring back to a simmer, remove from the heat, ladle into bowls and serve hot.
