KitKats!! 🌸
Plum wine is alcoholic, floral, overly sweet for me and has a lingering plum aromatic. Quite fun.
Wasabi, a soft woody and herbal aroma in the coating. Not punchy or hot but still overtly sweet.
Fossa, sake kasu, a really interesting bar with pieces of sake lees. Malaysian cocoa is bright, clear acidity and cocoa aromas. The kasu chunks are chewy, umami aromas, ferment-y, super interesting. Loved it.

After 15 years of crafting confections I am seeing a personal style evolving.

Flavor and pleasure are the ultimate goal. The quality of the chocolate is paramount. It has taken time to appreciate myself in my work.

Yeah it is a garnish in this case but could enrobe the entire shape. It is an adventure to explore ingredients, techniques and how to express those in a small confection. Here the inside becomes a garnish on the outside. Dark roasted almonds are ground with cocoa butter and caramelized sugar, a spice masala adds kick from the outside, and a bit of salt. Just a hint, but carrying a punch of flavor, and not the whole story.

Today I took ride to FiDi. See’s happened to be along my path. This 100 year old institution is holding fast to their corner of Market Street.

The See’s family have long been patrons of the jazz scene by

Their is a hot topic in SF and The Bay about business that seem local- likely founded by locals- but now owned by private equity investment groups. This usually means neutering the local family ethos and Bay vibes that were nurtured in the business in a local community. We may believe we are supporting a local business and be duped by branding and a lack of transparency.

See’s was purchased by Berkshire Hathaway in 1972. That investment firm has kept See’s strong. Their relationship to is all the more worth supporting.
