Cooking for community fills my heart up. I am so grateful to be a part of ‘s culinary healing team. I often find myself lighting up with joy when the opportunity arises to cook for a cause and being surrounded by my people qtviet teamed up with to host a dinner to raise funds for anti-deportation efforts and to welcome to America.

hai had quietly been collecting fish scraps from a local community fish connect which amounted to 30 lbs of halibut, tuna, and bass. we processed all of it into cha cả (fried fish cakes) and those cakes went into a vegan noodle soup. the smells coming from the kitchen that day were insane and I live for moments like these when all palettes and senses are awoken!!! ✨✌️

Reminiscing about a meal that Auntie Manna’s and prepared for Lavender Phoenix’s 20th anniversary celebration in August. Always an absolute joy to cook with fellow QTViets - it’s probably the biggest event that AM has done before! 💬

Auntie Manna’s is practicing being in the practice of q***ring and honoring traditional foodways with community !

On the menu:
🥡Món Chính / Main Dinner:
- Bánh hỏi hè: Summer rice noodle wrap spread with scallion oil, fresh herbs, and ba rọi / spiced pork belly & cà tím nướng / grilled creamy eggplants. Served with a seasonal sauce of mấm nêm góc: diasporic sauce of fermented fish or coconut aminos with seasonal stone fruit, fried garlic, and lemongrass with chilis on the side

- Chè oải hương / Lavender coconut dreams: layers of taro or khoai mỡ tapioca balls, coconut jello, butterfly-pea condensed coconut milk, seasonal berries

In March, we fulfilled a collective dream to learn how to roast a whole pig. Together, we learned how to butcher a pig from the brilliant and sourced the pigs from

In the pouring rain of early spring , culinary healing team entered a portal with loved ones and set out on a journey to cook by fire. We spent three whole days cooking by fire, using every part of the pig - making dishes like thịt khô, heo nướng, cảnh, giờ thứ, and settled our time with quarts of bone broth carefully skimmed fire fed by many hands.

This journey has only begun 🌈🌀

This might have been one of the busiest years of my life (so far), juggling a full time job, pop ups, a move up the mountain, building community, and working with Second Generation Seeds as a partner chef.

I’m sleeping very deeply nowadays, gearing up for the winter months of hibernation and a trip back to the homeland with fellow q***r / trans việt chosen family at the end of the year. With all that is going on in the world, I am grateful to be amongst loved ones, lifting each other up to do the good work where one cannot. I show up when I can and if I can’t, I’m rooting for those who are showing up.

I’m looking back and thinking about the past few months wrapping up work with Second Generation Seeds and I fall into a well of appreciation for being able to explore crops like Tia Tô and Rau Đến (Amaranth) that are culturally relevant and significant to the Việt community. While working on these seed trials with , experimenting with recipes, and cooking traditional dishes, I found myself asking relatives so many questions which then led me down an ancestral well where I felt resilience, struggle, but also warmth and joy. In Việtnam, I found myself seeing Tía Tô and Rau đến everywhere I went, even just on a walk through the neighborhood. In Việtnam and here at home in the states, one thing was common: it’s grown in the home garden, in pots, styrofoam containers, cans, anything that will hold soil and started from propagations of the strongest stem. Kellee and I left off on the question: what happens when these crops aren’t available to propagate anymore?

Preparing a feast for flower hungry guests. I had the opportunity and honor to work with Valentin from .calendar at a few months ago.

rau dền - amaranth prepared two ways in auntie manna’s test kitchen

Cánh rau dền - amaranth soup is a dish I grew up with. My mom would make this and I remember questioning why it was a red soup. She’d say, “it’s good for you, eat.” When I think of comfort food, I think of food that grounds me, nurtures me, conjures memory, and inspires me. I battered and fried amaranth for a lunchtime snack—very big fan 🙂

Okay so making bánh mì was an absolute dream! I love looking out the window at flowers and trees while I’m cooking with friends. Teaching has always been a passion of mine and to be able to walk through the history of the bánh mì and how to build one was really special (even if it was just two of y’all).

Hi everyone!
It’s been a little while so I’m checking in. I’ve been traveling Vietnam with family and it’s been an amazing experience visiting the motherland for the first time. Auntie Manna’s has been focusing on community events since the beginning of spring and will be so until September of this year.

For now, here’s this recap of the first pop up of the year at Eva’s with my all time fave bánh xèo! I can use up to four burners now and crank out 75 in about 1.5-2 hrs? I can’t recall but I know I can’t do it without support from my community. What a whirlwind of a year, whew!
