Last look at Chef Ben’s recent RepĂșblica del Cacao Trip to Ecuador! đŸ«

Day 3:
Chef Ben visited the chocolate factory for RepĂșblica Del Cocoa where they make a variety of different chocolates! He was able to see their process from sorting cocoa beans, the conching and separating of the shells from the cocoa nibs, the grinding process, to seeing the chocolate dispensed on the belt which went through a cooling tunnel and straight into packaging and then set onto a pallet to be shipped. He also enjoyed a chocolate tasting!

Let’s take a look at Chef Ben’s recent RepĂșblica del Cacao Trip to Ecuador!

Day 2:
Chef Ben visited the Amazon for a tour of a cocoa farm where he met with the family that runs the farm and toured their various crops. He sampled fresh cocoa fruit, which he says is, “very sweet, slimy, but tasty!”

He was also able to see how the fruit is processed from cocoa beans to chocolate—through fermentation, drying, and roasting! đŸ«
